For Stew Paprikash

  • Olive oil EVO to taste

  • 1 large onion/ finely chopped

  • 2 cloves of garlic/ minced

  • 2 fresh yellow peppers/ diced

  • 650 g chicken breast meat/ or any meat- diced

  • 1 green lightly hot pepper

  • 3 medium San Marzano tomatoes/ chopped

  • salt and pepper to taste

  • 1 flat Tbsp red ground smoked paprika

  • 1/2 tsp hot ground paprika/ - optional

  • 150 ml tomato basil passato sauce

  • 1 tsp dry basil

  • 1. 5 liters of vegetable broth/ or 1 Tbsp bio dry spice Vegeta and water

  • 3 medium potatoes/ peeled and diced

  • 1 large courgettes/ peeled and

    diced, or 3 small zucchini

  • 2 Tbsp fresh parsley for sprinkle to the

  • big deep pot 5 liters


For Noodles:

  • 1 egg

  • 3 Tbsp flour

  • salt and pepper to taste

  • dry parsley

Preparation:
  • First prepare all ingredients as described above.


Preparation stew:

  1. Sauté the chopped onion in olive oil for approximately 5 minutes over low to moderate heat, stirring occasionally, until it softens and turns yellow.

  2. Add the chopped garlic, and once it becomes aromatic, incorporate the chopped peppers along with the mildly hot pepper. Mix thoroughly and season with a little salt and pepper to taste.

  3. Allow the mixture to simmer until softened, about 10 minutes, stirring occasionally.

  4. Immediately add the diced chicken, mix everything well, cover, and reduce the heat.

  5. After 15 minutes of simmering, when the chicken is cooked, add the chopped tomatoes. Cook for about 10 minutes, stirring occasionally.

  6. Next, add the herbal and dry spices (basil, ground pepper, and hot ground pepper), mix well for about 1-2 minutes, then add the diced potatoes and zucchini. Pour in enough broth to cover all ingredients.

  7. Cook covered over low heat for approximately 40 minutes, stirring occasionally. Add a little water as needed. As the zucchini and other vegetables cook, they will release their liquid, so avoid adding too much water.

  8. After this time, add the tomato passata basil sauce, stirring well with the other ingredients. Let it cook for an additional 20 minutes.

  9. Once the broth has developed a rich color and the vegetables and meat have softened, prepare the noodles.


Make Noodles:

  1. In a small bowl or on a plate, combine 1 egg, a pinch of salt and pepper, dried parsley, and 3 tablespoons of flour. Mix thoroughly until a smooth, lump-free mixture is achieved.

  2. Using a small spoon, scoop portions of the mixture and add them to the broth. Continue this process until all of the mixture has been used.

  3. Allow to cook for an additional 5 minutes, then garnish with chopped fresh parsley. Turn off the heat.

  4. Let the dish rest for 10 minutes to allow flavors to meld, then serve in deep plates accompanied by a slice of bread.

NOTE:
  • You may substitute zucchini with eggplant if preferred, with the fact that you will add them when you add peppers.

  • This chicken summer paprikash must be light and not too full of meat. I deliberately combined chicken white meat because it is not difficult in the hot summer days.

  • Instead of chicken breast, you can add small drumsticks, or a few pieces of chicken thighs.

  • In the absence of Tomato passato sauce, canned tomato pulp can be used as an alternative.

  • Exercise caution to avoid oversalting the soup, as the broth is inherently salty.

  • For a thicker broth, blend 3-4 pieces of boiled potatoes or zucchini with a small amount of water and return the mixture to the pot. This step was omitted as noodles were added.

  • As an alternative to broth, use one spoon of Vegeta bio seasoning mixed with an equal amount of water.

  • Store the remaining Paprikash covered in the refrigerator for up to three days.

  • This dish can be frozen in sealed containers for up to two months. Defrost in the refrigerator one day prior to consumption.

  • Reheat using a saucepan or microwave.
