Vegan Serbian Paprikash

  • Vegan Paprikash stew, enhanced with a variety of vegetables and complemented by Serbian ajvar, offers a light and flavorful meal suitable for any day. The preparation is quick and straightforward. Please follow the recipe.

Ingredients: simple, total time: 70 min. 2 - 3 serving
  • 1 large onion/ finely chopped

  • 2 carrots/ cut into rings

  • 1 parsnip/ diced

  • 3 cloves of garlic!/ minced

  • 4 potatoes/ diced

  • 1 big tomato/ chopped or 2 Tbsp tomato concentrate+water or 300 ml juice

  • 1 full spoon of ajvar

  • 1 red pepper/ diced

  • 1 green pepper/ diced

  • 3 Tbsp oil for frying

  • 1 Tbsp parsley leaf/ finely chopped — or celery leaves

Preparation:
  1. Prepare all the ingredients as outlined above.

  2. Sauté the finely chopped onion in oil.

  3. Once the onion has softened, incorporate the chopped pepper, carrot, and parsnip for stewing.

  4. After 10 minutes, add the chopped garlic, one spoon of ajvar, ground paprika, and diced potatoes.

  5. Add sufficient water to cover all the vegetables and cook for approximately 40–45 minutes.

  6. Once the broth has developed a rich color, season according to taste.

  7. Near the end of cooking, add chopped parsley or celery leaves.

NOTE:
  • To achieve a thicker consistency for the paprikash, blend one potato with a small amount of liquid.

  • Store the paprika in the refrigerator for up to four days.

  • Paprikash can be stored in the refrigerator in an aluminum container with a lid for up to three months.
