  • 7 medium potatoes/ gold

  • 3 Tbsp Olive oil EVO

  • 2-3 cloves of garlic/ minced

  • salt and pepper to taste

  • 150 ml passata tomato sauce

  • 1 full tsp dry oregano

  • 1/4 tsp cayenne pepper/ or 1/2 tsp allspice

  • about 300 ml water/ or vegetable broth

  • 1-2 Tbsp parsley leaves/ finely chopped

Preparation:

Prepare the Potatoes.

  1. Peel the potatoes and remove any impurities. Wash them thoroughly and slice them.


Frying Potatoes:

  1. In a large flat pan, fry the potatoes in olive oil over low-medium heat until they achieve a golden brown color.

  2. While frying, turn the potatoes every 7-10 minutes to ensure they become evenly golden brown.

  3. Once cooked, use a slotted spoon to remove the potatoes and place them on a kitchen towel set on a plate.

  4. In the same pan, add chopped garlic and stir for 10 seconds before incorporating tomato passata sauce and a small amount of water.

  5. Season the mixture with oregano, thyme, salt, and pepper.

  6. Return the potatoes to the pan, cover, and cook on low heat for approximately 20-25 minutes, gradually adding water and stirring as needed.

  7. Just before finishing, add chopped parsley.

  8. Serve warm.

  • Tomato puree can be used as an alternative to tomato passato sauce.
