## Perfectly Paired Roasted Potatoes: A Quick and Delicious Side for Any Meat
This roasted potato dish goes well with any type of meat, including fish. With this recipe, it is important that you work in sync, and that way it will be ready quickly. While I was cooking the potatoes, I stewed the onion in a pan and added 2 teaspoons of ground pepper, then reduced the heat for the potatoes, which were still cooking in the water. These roasted potatoes are very delicious and easy to make. Follow recipe.
Ingredients: simple, total time: 25 min., 3-4 serving
1 gold onion/ cut into ribs
5 small potatoes/ cut into rings thickness 3–4 mm
2 medium potatoes/ cut into rings thickness 3-4 mm and halved
Olive oil EVO to taste
water as needed
salt and pepper to taste
2 tsp red ground paprika
Preparation:
Prepare all the ingredients as described above.
Peel and wash the potatoes and cut them into thinner rings 3-4 mm thick, if they are larger, cut them in half lengthwise and cut them to the same thickness.
Put the potatoes in a medium saucepan and cover with water and add a teaspoon of salt, cook until boiling.
While the potatoes are cooking, cut the onion into strips and add it to a deep wok pan.
Drizzle with olive oil and fry over low-moderate heat until the onion becomes transparent and softened well.
When the onion has softened, add 2 teaspoons of ground paprika and mix everything well, reduce the heat to the lowest and stir occasionally for about 10 minutes.
When the water for the potatoes boils, let it boil for another 10 minutes, then turn off the heat.
Separate 150 ml of the liquid used to cook the potatoes, and strain the potatoes well.
Add potatoes to the pan with onions, 1/2 of the liquid you set aside, salt and pepper to taste, and mix.
Simmer for about 7–10 minutes, then add the rest of the liquid and mix.
Continue to simmer for about 10 minutes, stirring occasionally.
You can serve ready roasted potatoes with all kinds of steaks, meat and even fish.

NOTE:
Keep the rest of the potatoes covered in the refrigerator for up to 2 days.
Reheat in a pan or microwave.
