Ingredients: simple, total time: 80 min.
  • 600 g flour

  • 3 egg yolks

  • 315 g of margarine/ or butter

  • 210 g of granulated sugar

  • 1 bag of vanilla sugar/10g

  • 1 lemon peel grated

  • homemade apricot jam for spread

  • powdered sugar for sprinkling

Preparation:
  1. Begin by mixing the egg yolk with the sugar, vanilla sugar, and lemon peel using a mixer.

  2. Once the mixture becomes frothy, incorporate the softened margarine at room temperature.

  3. Set aside 100 g of flour, and add the remaining 500 g to the mixture.

  4. On a floured surface, knead the dough slightly by hand, then refrigerate for 30 minutes.

  5. Roll out the chilled dough to a thickness of approximately 1-1.5 cm.

  6. Cut out circles using a smaller cutter, place them on a baking tray, and bake in the oven at 160 °C for 10-15 minutes until they are lightly browned.

  7. Ensure the baked goods remain light in color.

  8. Once cooled, pair the pieces with apricot jam.

  9. If desired, dust with powdered sugar.

NOTE:
  • The longer the vanilla cookies stand, the softer they will be.
