In conclusion, this vanilla cookie recipe is more than just a set of instructions; it is a gateway to creating memories and celebrating traditions. So, gather your ingredients, roll up your sleeves, and embark on this delightful baking adventure that will fill your home with warmth and happiness this holiday season.
Ingredients: mold 30 cm round, simple, total time: 80 min.
320 g flour
250 g butter or pig fat (homemade lard)
3 eggs
250 g ground walnuts
180 g sugar
1 bag of vanilla sugar/ 10 g
1/2 lemon zest
1 juice of 1 lemon
60 g ground hazelnuts
--------------------------------------
1 cup powdered sugar for sprinkling
apricot jam
2 bags of vanilla sugar/ 20 g
Preparation:
Begin by using a mixer to blend the butter or lard, then incorporate the sugar and mix again.
Next, add three egg yolks, which should be separated from the egg whites (the egg whites will be needed later). Include the walnuts, vanilla sugar, lemon zest, and lemon juice, and mix thoroughly. Gradually fold in the flour with a spatula, then proceed to knead the vanilla dough by hand.
Once a smooth dough is achieved, transfer it to a floured work surface to prevent sticking. Roll the dough to an 8 mm thickness using a rolling pin, then use a mold to cut out the pieces.
Arrange the cut pieces on a baking tray.
Beat the egg whites until a thick consistency is reached. Spoon the egg whites onto the top of each piece and sprinkle with hazelnuts where the egg whites are applied.
Apply the egg whites and hazelnuts only on the top of the vanilla pieces, although you may cover the bottoms if desired.
Once prepared, bake at 160 °C for 10–15 minutes. Ensure they do not darken; the dough should remain white and beige.
After baking, coat them in powdered sugar mixed with two packets of vanilla sugar.
Arrange them on a tray. They are best enjoyed after two days as they soften.
I trust you will appreciate this recipe and consider making vanilla in the future. Serve and enjoy. Buon appetito!
NOTE:
Instead of hazelnuts, you can also put half a walnut from the shell as a decoration. It's better for me like this. Grind the hazelnuts; that goes without saying;)
Keep them in an airtight box.
