Apple Muffins

  • Easy recipe apple dessert muffins, delicious, soft and juicy. Follow recipe.

Ingredients: For 8–9 muffins, simple, total time: 40 min
  • 1 red apple

  • 1 egg

  • 100 g of sugar

  • 80 ml of seed oil

  • 150 ml of apple juice (the juice of 2 apples)

  • 240 g of flour

  • 1/2 bag of baking powder/ 5 g

  • powdered sugar

  • cinnamon or vanilla to taste

  • grated rind of a lemon or orange

  1. First, turn on the oven to 180 °C (I used the oven in static mode, if you use the fan, lower the temperature a little).

  2. Cut the red apple into rather small cubes.

  3. Mix the egg with the sugar with a whisk, then add the seed oil and apple juice (obtained from 2 puréed apples)

  4. Add the flour, baking powder and herbs (cinnamon or vanilla or the grated rind of a lemon). Mix quickly and add the previously cut apple.

  5. Transfer the dough into the muffin molds, I used the paper cups if you only use the mold you have to grease and flour it, so the mixture does not stick.

  6. Bake for 20–25 minutes at 180 °C in a preheated static oven.

  7. Remove from the oven the apple muffins and top with the icing sugar.
