The Irresistible Allure of Cherry Sweetness

  • In many Balkan households, sweet cherry serves as more than just a dessert; it is a symbol of hospitality, a ritual delicacy offered to guests alongside a glass of cold water. Its preparation marks the onset of summer, coinciding with the appearance of ripe, dark, and juicy cherries in markets and gardens, filling kitchens with the aroma of fruit and gently simmering sugar syrup.


  • Unlike jam or marmalade, sweet cherry retains the shape of the fruit, while the syrup remains clear and thick, akin to liquid honey. This harmonious balance between fruit and sugar imparts its distinctive character, making it one of the most treasured traditional recipes in domestic cuisine.


  • Sweet cherry is a dish that requires careful preparation, characterized by patience and a deep respect for tradition.

Ingredients: simple, total time: 50 min.
  • 1 kg of ripe cherries

  • 1 kg of sugar

  • 400 ml of water

  • 1 lemon (juice and, if desired, a little grated peel)

  • 1 bag of vanilla sugar (optional)

Preparation
  • Initially, the cherries are washed, the stems are removed, and the pits are carefully extracted, ensuring the fruit remains as intact as possible. In traditional methods, this process is often performed using a needle or a specialized tool to maintain the cherries' shape even after cooking.


  • Sugar and water are combined in a large saucepan and then boiled over medium heat until a thick syrup forms. The syrup is deemed ready when it feels slightly sticky between the fingers or when a drop from the spoon retains its shape.


  • The cherries are gently added to the prepared syrup. The pan is carefully shaken, avoiding the use of a whisk, to prevent damaging the fruit. The mixture is cooked on low heat for approximately 20 to 30 minutes, with occasional skimming of the foam that accumulates on the surface.


  • Near the end of the cooking process, lemon juice and vanilla sugar are incorporated to maintain the clarity of the syrup and impart a slight freshness to the taste. Subsequently, the pot is removed from the heat and allowed to cool completely.


Storage and serving
  • The chilled cherry preserve is transferred into sterilized jars and stored in a cool, dark environment. Traditionally, it is served with a glass of cold water, but it also pairs well with pancakes, Greek yogurt, or a scoop of vanilla ice cream.


  • In local tradition, cherry preserves are not only a delicacy but also a symbol of hospitality. They are often reserved for special occasions and the arrival of guests during the summer months.

  • In Serbia, cherry sweets or other sauces are always served in front of guests with a little spoon and a glass of water, along with coffee, it is in a way an old custom that has remained on the Balkan Peninsula.
