Preparation:

Biscuit:

  1. Prepare a round cake pan, grease it well with a little butter and flour.

  2. Melt the butter in a bowl and allow it to cool slightly.

  3. Separate the egg yolks from the egg whites.

  4. Beat the egg whites until stiff, then beat the egg yolks with the sugar until you get a light mixture.

  5. Then add melted butter to it and combine.

  6. Add baking powder and cocoa to the flour and mix well.

  7. Finally, alternately add flour and egg whites to the egg yolk mixture and mix lightly with a spatula.

  8. Pour the mixture into a mold and bake at 180°C for about 25 minutes.

  9. When you notice that the biscuit separates a little from the edges and that its surface is firm, pierce it in the middle with a toothpick.

  10. If there is no wet residue of the mixture on it, the biscuit is ready. Leave it in the mold to cool.

  11. The biscuit is ready for cream when the underside of the mold is cold to the touch.

  12. Then start preparing the cream.

Cream:

  1. Soak the gelatin in cold water according to the instructions on the package. Blend or process the chestnut purée and rum with a stick blender until you get a smooth mixture.

  2. Then beat the sweet cream into a solid whipped cream.

  3. Slowly melt the gelatin over very low heat.

  4. When the melted gelatin has cooled a bit, add a few tablespoons of whipped cream to it, combine, and add the chestnuts.

  5. Finally, lightly mix the rest of the whipped cream into the chestnuts with a spatula.

  6. Pour the chestnut cream over the biscuits in the mold and place the cake in the fridge overnight to allow the cream to set well.
