Ingredients: cup measure 240 ml, simple, total time: 80 min.

For the Dough:

  • 1 cup of granulated sugar

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/4 tsp cinnamon

  • 3 cups of flour

  • 1 cup diced butter/ 240g

  • 1 large lightly beaten egg


For the Layer for the Peaches

  • 5 large pieces peaches/ peeled and cut into cubes

  • 1/2 cup of sugar

  • 1 Tbsp cornstarch

  • 1 tsp lemon juice

  • 1/4 tsp cinnamon


For Overflow

  • 1 cup powdered sugar

  • 1/4 tsp almond extract

  • 1 Tbsp fresh milk

Preparation:

Dough:

  1. Mix the dry ingredients and add the butter, stirring all the time. Before that, lightly beat the egg and add it. Stir until you get a crumbly dough, and spread 1/2 of it on the bottom of the crust pan.


Layer of Peaches:

  1. Mix sugar, cornstarch, lemon juice and cinnamon and add peach cubes.

  2. Pour the resulting mixture over the dough and distribute evenly.

  3. Sprinkle the remaining crumble dough over.

  4. Bake at 180°C, about 50-55 minutes. Check with toothpick. Cool well.

  5. Make the topping (optional) by mixing powdered sugar with almond extract and milk, (you can use whipped cream or fruit syrup, or fruit topping as for a cheesecake.)

  6. Before serving, sprinkle the cake with the obtained topping.
