Put beaten and salted eggs in one bowl with parsley or oregano, and cornmeal, semolina (or breadcrumbs) in another.
Dip each slice of eggplant in the egg and then in the selected dry layer (corn flour/semolina)
Baking:.
Arrange on a baking sheet lined with baking paper, spray with a few drops of oil and bake in a preheated oven at 200-220°C for about 15-20 minutes until golden brown, or fry briefly on a pan each side about 3-4 minutes to low moderate heat.
