  • 1 kg hot peppers

  • 850 ml cold water

  • 300 ml vinegar / 9%

  • Peppercorns to taste

  • 2 teaspoons granulated sugar

  • 2 teaspoons salt

  • new jars / 200 ml

  • new lids

  • Baking at preheated oven 90°C, 40 minutes.

Preparation:
  1. Thoroughly wash the hot peppers and remove the stems. Select only the undamaged peppers, setting aside any that are compromised (these can be stored in the freezer in a bag).

  2. Arrange the peppers in jars, stacking them side by side.

  3. Add seven peppercorns to each jar.

  4. Continue this process until all peppers are utilized.

  5. Prepare a dressing for the peppers by combining water, vinegar, salt, and sugar in a deep saucepan.

  6. Using a small ladle, pour the dressing into the jars until full, then seal with lids.

  7. Ensure that the jars are either new or sterilized, and that the lids are new and free from wear.

  8. If using old lids, clean them with alcohol and avoid any that are rusty.

  9. Place the sealed jars in a preheated oven at 90°C for 40-45 minutes.

  10. Afterward, invert the jars and cover them with a cloth.

  11. Once completely cooled, store the jars in a dark, cool location.
