Ingredients: It consists of 3 jars of 800 g, standing time: 30 min, cooking time: 1h 35 min., total time: 2h 25 min.
  • 21 long large peppers - 3kg/ without stem and seeds

  • 1/2 head of garlic - 6 large garlic / minced

  • 15 peppercorns

  • 150 ml of vinegar/ 9 % alcohol

  • 200 ml of Olive oil EVO

  • 1/2 tsp of granulated sugar

  • 1. 5 tsp of salt/ or to taste 

  • 6 Tbsp of chopped fresh parsley 

  • 3 jars with lids/ sterile/ 800g

Preparation:
  1. Wash the peppers and remove the stems and seeds. Clean well.

  2. Place the baking paper on the right side of the oven and arrange the peppers.

  3. Bake in a preheated oven at 250°C, for the first 20 minutes, place on the upper level of the oven to bake.

  4. After 20 minutes, turn the peppers and bake them for the same amount of time.

  5. After the specified time, remove the peppers from the oven and arrange them in a larger pot and cover, let them cool completely. In this way, the peppers will burn well and peel more easily.

  6. When the peppers have cooled completely, peel them and cut them into thin strips lengthwise, then cut them in half.

  7. Place the prepared peppers in a large deep bowl.

  8. In a medium bowl, mix salt, sugar, vinegar and olive oil. Mix it all well until the sugar dissolves as well as the salt.

  9. Add chopped garlic peppercorns and parsley. mix again.

  10. Pour this mixture over the peppers and mix well.

  11. With the help of a ladle, pour into sterile jars and close them well with sterile and clean lids.

  12. Place 2 clean cotton cloths in a double layer in a deep pot and arrange the jars.

  13. Pour water up to the height of the jar so that it does not overflow the lid.

  14. Cook until the water boils.

  15. When the water has boiled, reduce the heat and cook on low heat for another 35 minutes to complete pasteurization.

  16. Remove the jars and let them cool completely, then store them in the pantry in a dark and cool place.

  17. Enjoy your winter preserves and Macedonian easy preparation!

NOTE:
  • If you want to enrich this salad, you can add eggplant, which you will cut into feta with the skin and bake together with paprika, while making sure that the eggplant softens quickly, so control the oven. You will also need another jar, add salt, olive oil and vinegar to taste.
