Muffins with Apples

  • I love making muffins, especially in combination with fruit. Today I had apples, and I was craving something really sweet, so I made a great apple muffin mix. The dough is soft and aromatic with the addition of vanilla, cinnamon, and lemon peel. This recipe is so good, very delicious, and best of others, because I have other methods to make. It is easy to work, in just 10 minutes, you will have an almost ready mixture for baking. Muffins are so delicious! You've must try, make yourself and your loved ones happy. Follow recipe.

Ingredients: simple, total time: 40 min. 12 muffins

Dough:

  • 2 eggs

  • 100 g of granulated sugar

  • 1 bag of vanilla sugar/ 10 g

  • 150 ml Greek yogurt/ or 2 full spoon

  • 1 tsp lemon peel/ grated

  • 250 g of flour 00/ smooth

  • 1/2 bag baking powder/ 5 g

  • 2 medium apples/ mashed

  • 100 ml olive oil / or melted butter

  • 1 and 1/2 tsp of cinnamon

and:

  • chocolate drops/ as you like for later

  • powdered sugar/ for sprinkle

Preparation:
  1. Wash, peel and cut the apples into small pieces, blend with super chopper, add oil, cinnamon mix again, and set aside, covered.

  2. In a deep bowl, beat the eggs, sugar, vanilla sugar until foamy until the mixture takes on a light and smooth structure on high speed. Add yogurt, grated lemon peel, mix shortly, gradually add flour with baking powder, mix again on medium speed.

  3. Now add the mixed apples with oil and cinnamon, mix everything well into a uniform mixture and set aside.

  4. Coat the muffin molds with oil with help of a brush.

  5. Pour with a 2 and half spoon mixture, but not to the top, because the dough will rise. If you want, add one chocolate drop to each muffin like me.

  6. Bake in a preheated oven at 180 °C for about 25-28 minutes.

  7. Cool the muffins complete, remove them from the mold with help of a thin knife, place transfer on a decorative tray or in a box with a lid, sprinkle with powdered sugar if you like, it's optional.
