Today I decided to make a delightful Italian meal that is not only ready quickly but is also incredibly tasty and packed with essential vitamins. The centerpiece of this dish is spaghetti, a classic staple of Italian cuisine that is beloved around the world for its versatility and comforting nature. I paired the spaghetti with fresh Italian sausages, which add a rich and savory flavor that complements the other ingredients perfectly.

To enhance the nutritional value of this meal, I included vibrant broccoli, a cruciferous vegetable known for its high vitamin C and fiber content. The bright green florets not only provide a pop of color to the dish but also contribute a satisfying crunch and a wealth of nutrients. Ingredients: simple, total time : 35 min., 2 servings
300 g pasta/ I used
1 small of broccoli/ washed and boiled 5 min.
2 large tomatoes San Marzano/ skin peeled and chopped
1 Tbsp tomato concentrate+ 150 ml water
300 gItalian fresh sausages/ mashed
1 small onion/ chopped
3 cloves of garlic/ minced
4 Tbsp Olive oil/ or to taste
salt and black pepper to taste
1 Tbsp Parmesan cheese+ 1 Tbsp for sprinkle
Preparation:
Divide the water between two smaller pots: one for the broccoli and the other for the tomatoes.
Once the water reaches a boil, cook the broccoli for approximately 5 minutes. Remove the other pot from the heat and add the washed tomatoes, leaving them in the hot water for 10 minutes to facilitate easier peeling.
Peel the tomatoes and chop them into small pieces.
Drain the broccoli and separate it into small florets, then set aside.
Begin by processing the tomatoes and sausages.
Remove the casing from the sausages, place them on a plate, and mash thoroughly. Finely chop the onion and garlic, setting them aside.
Pour olive oil into a wok pan, ensuring it is somewhat deep, and set it over low to moderate heat.
Once the oil is heated, add the finely chopped onion and simmer for about 4-5 minutes until softened, stirring occasionally to prevent burning.
Add the mashed sausages, mixing well with the onion. Cover the pan and cook for approximately 12-14 minutes.
Add the minced garlic and simmer for an additional 10 seconds.
When the garlic becomes fragrant, incorporate the chopped tomatoes and tomato concentrate mixed with water. Mix thoroughly, season with salt and pepper to taste, and cover.
Cook for about 15-20 minutes over low to moderate heat, stirring occasionally.
After this time, reduce the heat and add the broccoli, which was previously cooked for 5 minutes and separated into small florets. Allow it to cook for about 5-7 minutes.
Pasta:
Meanwhile, bring a pot of salted water to a boil and cook the pasta for one minute less than the package instructions indicate.
Combine Ingredients
Thoroughly drain the pasta and add it to the broccoli and tomato sauce. Continue to cook over low heat for approximately 3 minutes.
To slightly thicken the sauce, you may add a small amount of grated Parmesan. Stir together over low heat for about 1 minute, then remove from the heat.
Serve with a garnish of chopped Parmesan cheese.

NOTE:
Tips and advice:
With this sauce goes all pasta including gnocchi.
In case you don't have tomato concentrate, use 3 San Marzano tomatoes.
If you like it hot, you can add 1/2 teaspoon of chili flakes to the sauce.
If you like aromatic dishes, add some dried basil and oregano.
If you like creamy pasta, you can add spreadable cheese mixed with a little water to this sauce.
I added these ingredients to my taste and adjusted them to this summer time to make them easier to consume.
The recipe is for two people, and if there are four of you, just double the ingredients.
Always make sure to eat the rest of the spaghetti the same day.
