3 Tbsp Olive oil EVO
2 cloves of garlic/ minced
salt and pepper to taste
4 anchovies
3 dry tomato/ chopped
150 ml cooking cream
1 Tbsp Parmesan cheese
Preparation:
Cooking pasta:
Fill a deep pot with water and add a teaspoon of salt. Bring to a boil, then add the pasta and cook as per the package instructions. Reserve 2–3 tablespoons of the cooking water in a cup.
Strain the pasta using a colander to ensure it is thoroughly drained.
Preparing broccoli:
Place the broccoli, separated into smaller florets, in boiling water. Cook for 4 minutes, then strain and set aside.
Heat olive oil in a large pan over low to moderate heat.
Add the chopped garlic and stir. Once it becomes fragrant, add the anchovies and finely chopped dried tomatoes. Mix quickly, then incorporate the strained broccoli and season to taste.
Simmer for a few minutes, then pour in the cooking cream.
Continue to simmer, stirring occasionally, for approximately 5–7 minutes.
Towards the end, add one spoonful of grated Parmesan and one spoonful of pasta water. Add the strained pasta and mix for about a minute. Turn off the heat.
