Ravioli in Butter sauce with Mushrooms and Pine nuts

Ingredients: simple, total time: 25 min., 3-4 servings
  • 460 g Ravioli "Garofalo" stuffed with ricotta and spinach

  • 350 g of button mushrooms/ or 80g dry mixed mushrooms with Porcini

  • 70 g of pine nuts/ 2 handful

  • 70 g of butter/ divided

  • 100 ml dry white wine

  • 2 Tbsp of Olive oil EVO

  • salt and pepper to taste

  • 2 large cloves of garlic/ finely chopped, or 3 standard size

  • 2 Tbsp chopped parsley

  • 2-3 Tbsp of grated Parmesan cheese

Preparation:

Preparation Ingredients:

  1. Wash the mushrooms and cut them into thin leaves, and put them aside. If you use dry Porcini mushrooms, soak them in 350 ml of water and let them stand for 15 minutes. After a while, strain the mushrooms and save the liquid.

  2. Toast the pine nuts over medium heat for 2 minutes until they are golden brown, shaking the pan occasionally to prevent burning. Transfer the pine nuts to a separate bowl.

  3. Prepare a deep pot with water for the ravioli, adding 1 teaspoon of salt. Bring the water to a boil to low heat.


Preparation Mushroom butter sauce:

  1. In the same pan, where did you roast the pine nuts, pour little olive oil add sliced mushrooms. Cook the mushrooms over medium-low heat for approximately 10 - 15 minutes, until the little liquid has evaporated. Avoid stirring the mushrooms for the first 3–4 minutes to maintain their color.

  2. (NOTE: If you use dry porcini mushrooms, after adding wine stew them for about 25-30 minutes, until we'll soften while adding the liquid in which they were left also water as needed.)

  3. During cooking, add white wine and wait for the alcohol to evaporate about 5-7minutes, cook until the liquid partially reduces, there should be a little sauce. Season with salt and pepper to taste.

  4. Reduce heat add 1/2 butter and minced garlic, stir gently to low heat.

  5. Once the water is boiling, add the ravioli and cook for 3 minutes.

  6. Using a slotted spoon, transfer the ravioli to the plate.

  7. When the mushroom sauce is ready, add the ravioli to the pan along with 2 spoons of the ravioli cooking water and rest of the butter.

  8. Stir gently for about 1-2 minute, then turn off the heat.

  9. Serve immediately on plates, garnished with grated Parmesan cheese, toasted pine nuts, and chopped parsley.

NOTE:
  • To enhance the flavor, consider using Porcini mushrooms. If using dried Porcini, soak them in lukewarm water for approximately 10 minutes and reserve the liquid. This liquid can be added to the mushrooms during stewing to impart an exceptional taste. Cooking is longer than with fresh mushrooms, but the taste is excellent!

  • For a creamier dish, you may choose to incorporate a mixture of Philadelphia cheese with a small amount of milk, or alternatively, use little cooking cream.
