  • 230 g "Garofolo"ravioli stuffed with Porcini and Truffles/ or spinach

  • water for ravioli + 1 tsp salt


For Sauce:

  • 1 Tbsp butter

  • 100 g smoked bacon/ diced

  • 2 large cloves of garlic/ minced

  • 200 ml cooking cream

  • 120 ml milk

  • salt and pepper to taste

  • 1 tsp oregano/ or to taste

  • 1/2 tsp chili flakes/ as desired

  • 3 Tbsp grated Parmesan cheese

  • 1 Tbsp parsley leaves/ finely chopped

Preparation:
  1. Begin by preparing all the ingredients as outlined above and stirring them together.

  2. Add the water for the ravioli at the start of the sauce preparation process.

  3. Boil the ravioli for approximately 4-5 minutes, then drain thoroughly.

  4. In a medium wok, melt the butter over low to moderate heat.

  5. Once the butter has melted, add the chopped bacon and cook until it turns translucent. Immediately incorporate the chopped garlic, stirring for about 10 seconds.

  6. When the garlic becomes aromatic, pour in the cooking cream, stirring for about 1-2 minutes over low moderate heat, then add the 120 ml milk.

  7. Season with oregano, a touch of black pepper, and a pinch of salt, keeping in mind that the bacon and Parmesan are already salty. Stir and cook for approximately

    4-5 minutes to low moderate heat.

  8. When the sauce starts to boil, reduce the heat and add the grated Parmesan and mix briefly until the sauce is smooth. (If the sauce appears too thick, add a little more milk.) I didn't add anything.

  9. Immediately incorporate the drained ravioli, mixing gently over low heat for about a minute, then garnish with chopped parsley. Turn off the heat.

  10. Your meal is now ready to serve.

  • In addition to all the ingredients, you can also add some dried tomatoes to this sauce, which you will stew when the bacon is already transparent.

  • Do not overdo it with salt, because bacon and Parmesan are already salty by themselves.

  • Ravioli, like other pasta, is not good to leave for tomorrow, so make sure you make the amount you need.
