Ingredients: simple, total time: 85 min.
Bark:
125 g butter/ room temperature
300 g granulated sugar
250 g soft flour
2 eggs
1 tsp baking powder/ 5 g
1/2 tsp of salt
1 flat Tbsp cocoa powder
250 ml yogurt
4 Tbsp red overcooked color/ or 2 bag- 20 g
1 tsp baking soda
Filling:
250 g cream cheese/ Philadelphia, Mascarpone
125 g soft butter
200 g powdered sugar/ or to taste
1 tsp vanilla extract
450-500 ml sweet cream
Raspberry Topping:
2 cup of fresh raspberries/ 500 ml
50 g granulated sugar
2 Tbsp cornstarch
60 ml water
Preparation :
Bark:
Heat the oven to 175°C.
Grease two 23 cm round molds (butter and flour) and line them with baking paper.
Add red food coloring to the yogurt and mix.
Mix softened butter and sugar with a mixer at medium speed. Add 2 eggs and continue mixing until combine well.
Then add sifted flour with cocoa and half a teaspoon of salt, mix everything well on medium speed, until uniform.
In a thin stream, add mixed yogurt with color, and at the same time add baking powder and baking soda, combine everything well until it becomes uniform.
Pour half the mixture into the prepared mold lined with paper, and straighten it, shake it a little before baking.
Bake the crust at 175°C for about 20-25 minutes. Check the dough with a toothpick.
Cool the finished crusts in the tray for 10 minutes, then take them out of the tray, carefully and completely cool on a wire rack and cut in half, so that you get two identical discs. You need 4 crust.
Repeat the process with the other half for the crusts.
If you have removed the unevenness from the crust, leave it aside and grind it in a blender when it cools down completely, all with this you will decorate the sides of the cake and the top of the cake with which you can also combine fruit.
Now make the filling.
Filling:
NOTE :
Before starting to make the filling, you can combine the white filling and the fruit filling as a topping if you like a more fruity taste. If you want it and just a decoration for the top of the cake, cut the ingredients from the attached cake in half.
In a large bowl, beat the soft butter with powdered sugar on medium speed until the mixture is smooth.
When combined, add cream cheese and mix again.
In another bowl, whip the sweet cream with vanilla extract into stiff snow, then gradually add it to the mixture of butter with sugar and cheese. The cream must be smooth and creamy.
Coat the cooled crust with the filling and flatten and repeat with all the crusts.
Decorate the sides with the filling and crumbs from the rest of the crust you blended.
Leave the last crust and put the raspberry dressing on it.
Leave the cake in the fridge to cool.
Raspberry Topping:
In a small saucepan, combine the raspberries, sugar, cornstarch and water. Cook for about 5-7 minutes. Leave the cream to cool for about 5 - 7 minutes.
Fill last crust and decorate the cake with raspberries and crumbs of crust.
You can also use this raspberry topping as a topping over the filling on the crusts if you like a more fruity taste.
Cool the cake for about 2 hours before serving.
