1 whole chicken/ about 2 kg
Marinada for Chicken:
1 tsp salt
1 tsp fresh ground black pepper
1 tsp dried garlic powder
1 tsp red ground paprika
6 Tbsp Olive oil EVO
2 Tbsp soy sauce
1 Tbsp wine vinegar/ or apple acid vinegar
For Vegetables:
6 potatoes/ sliced
3 medium carrots/ cut into rings
salt and pepper to taste
1 full tsp red ground paprika
provencal herbs/ thyme, rosemary - Mediterranean herbs
50 ml Olive oil EVO/ or to taste
parsley leaves for garnish when is finished - optional
Preparation:
Thoroughly clean the chicken, removing any impurities as well as the excess skin, tail, and neck.
Pat the chicken dry with a kitchen towel and place it in a deep bowl.
In a small bowl, combine all the ingredients for the marinade.
Using a glove, apply the marinade evenly over the chicken.
Secure the drumsticks with baking thread and tuck the wings underneath to prevent burning.
Brush the chicken with the remaining marinade.
Line a baking dish with moistened parchment paper, place the chicken inside, and bake in a preheated oven at 180°C for 40 minutes.
While the chicken is baking, peel the potatoes and carrots and slice them into rings.
Place the vegetables in a deep bowl, add salt, black pepper, ground paprika, herbs, and olive oil, and mix thoroughly.
