Crust:

  • 10 egg whites

  • a pinch of salt

  • 200 g of granulated sugar

  • 200 g of ground walnuts

  • 2 Tbsp of density/ cornstarch


Filling

  • 10 egg yolks

  • 3 grated lemon zest

  • 150 g of granulated sugar

  • 3 lemon juice/ 200 ml

  • 3 bag of vanilla pudding/ 120g

  • 600 ml of milk

  • 200 g of butter


For Sprinkle:

  • ground nuts

Preparation:
  1. 10 eggs, separate the whites from the yolks. Yolks set aside.


Crust:

  1. In a large bowl, add a pinch of salt to the egg whites and beat until foamy. Gradually incorporate the sugar while continuing to beat until stiff peaks form.

  2. Combine 200 g of ground walnuts with 2 tablespoons of density and mix thoroughly.

  3. Gently fold the walnut mixture into the beaten egg whites using a wire whisk or spatula.

  4. Prepare a large baking tray by lining it with non-stick baking paper.

  5. Pour the mixture onto the tray and smooth it out with a cake knife.

  6. Bake in the oven at 180°C for approximately 20 minutes.

  7. Carefully release the baked crust from the tray using a knife, then invert it and remove the baking paper.

  8. Divide the crust into three equal parts.


Cream:

  1. Place the egg yolks in a medium saucepan, then incorporate the grated rind of 3 lemons, 200 ml of lemon juice, and 150 g of sugar.

  2. Thoroughly mix the ingredients using a whisk, then add 3 packets of vanilla pudding powder and 120 ml of milk.

  3. Ensure the mixture is smooth and free of lumps.

  4. Add the remaining milk and blend well.

  5. Transfer the mixture to the stove and cook over low heat, stirring continuously until the cream thickens.

  6. Cover the finished cream with plastic wrap, ensuring it makes contact with the surface, and allow it to cool to room temperature.

  7. Once cooled, blend the cream using a mixer until well combined.

  8. In a separate bowl, beat the butter until it reaches a creamy consistency.

  9. Gradually incorporate the egg yolk cream into the butter, mixing until a smooth and beautiful cream is achieved. The cream is now ready.


Assembling the cake

  1. Position the first crust on a decorative tray with the bottom side facing up. Use a spoon to evenly distribute the filling, ensuring it is approximately 1 cm thick.

  2. Place the second crust in the same manner as the first and apply another layer of filling.

  3. Position the third crust on top, ensuring it is the uppermost layer, and spread the remaining filling over the entire cake.

  4. Finish by garnishing with grated walnuts and walnut kernels.

  5. Refrigerate the cake for a minimum of 3-4 hours, or ideally overnight, to allow it to set properly.
