Lemon Cake

  • A great cake is quickly made from lemon, you can also combine it with raisins. It is very tasty and easy to make. Follow recipe.

Ingredients: simple, total time: 70 min.
  • 4 eggs

  • 140 g butter

  • 280 g of powdered sugar

  • 270 g soft flour type 400

  • 1 baking powder/ 10 g

  • 200 ml milk

  • 3 bags vanilla sugars/ 30 g

  • 1 lemon

  1. Whisk four egg whites with half the powdered sugar and set aside. In another bowl, whisk the four egg yolks with the other half of the powdered sugar, until foamy. Then add the softened butter and stir until you get a homogeneous mass.

  2. When that happens, alternately add flour and milk, and when you have used up everything, add baking powder, squeezed lemon juice, and grated rind of the whole lemon to the mass.

  3. Combine the two masses by pouring the whipped egg whites into a bowl with the egg yolks and lightly stirring them with a food processor so that the slices do not fall off.

  4. Spread margarine or butter on the mold in which the cake will be baked (volume 1.5 l), sprinkle with flour and pour the mass, then bake in the oven that you have previously heated to 175 °C, for 45–50 minutes.

  5. Pour powdered sugar over the finished cake.

  6. Before baking, at the very end, if you like, you can mix a little raisin into the mass.
