Lime Cheesecake

  • A simple Lime Cheesecake with an easy way of cooking, the taste is aromatic, tropical, and refreshing. Lime contains a lot of vitamin C and is useful for strengthening immunity. Follow recipe.

Ingredients: simple, total time: 60 min., 10 serving
  • 2 lime

  • 200 g ground biscuits/ Plasma or other

  • 80 g butter/ melted

  • 1 Tablespoon brown sugar

  • 160 g ricotta cheese

  • 120 g fresh liquid cream

  • 100 g sugar powder

  • 15 g isinglass leaf

  1. Melt the butter on a slightly moderate heat and combine with ground biscuits. Line the cake tin with baking paper. Pour over the mixture and level well, you can also use the bottom of a glass for this.

  2. Leave the mold in the fridge for 30 minutes.

  3. Whip the fresh cream in a separate bowl and let it rest. Meanwhile, whisk the ricotta and sugar in a bowl.

  4. Place the isinglass in a bowl of water for 10 minutes.

  5. Squeeze the lime juice and heat it in a pan with brown sugar on a slightly moderate heat.

  6. Take isinglass leaves and dissolve them in juice, add to the ricotta cream and mix until the ingredients are combined.

  7. Then add the whipped cream, stir and combine well ingredients.

  8. Transfer the cream to the ground biscuit base and level it with a spatula.

  9. Garnish with mint or lime leaves and lime wedges.

  10. Leave the prepared cheesecake to cool for about 2–3 hours.

  11. Cut into slices and serve cold cake.
