Ingredients: mold 18 cm, simple, total time: 20 min. 10 servings
Base
200g dark biscuits
80 g melted butter
Cream
400 g cream cheese
50 g butter
100 g white chocolate
120 g cream/33%
150 g smaller filled round biscuits/Raffaello, round wafers, Ferrero/ - which you like most
Glaze
120 g cream/33%
100 g dark chocolate
Preparation:
Base:
Using a food processor, finely grind the biscuits and transfer them to a large bowl. Add the melted butter and thoroughly mix with a spoon until a homogeneous mixture is achieved.
Grease the mold and line it with parchment paper. Pour the mixture into the mold and press it evenly with a spoon to form a solid base for the cake. Refrigerate for 30 minutes.
In the meantime, prepare the cream.
Cream:
Place the cream cheese in a deep bowl, add the butter, and blend thoroughly with a mixer until a smooth mixture forms. Incorporate the melted white chocolate and mix again until well combined. Once the cream is fully integrated, set it aside.
In a separate deep bowl, pour 120 ml of whipped cream and whisk on high speed until a firm, airy consistency is achieved. Once ready, gently fold it into the cake cream using a spatula, ensuring it is well combined.
Spread this cream evenly over the base, using a spatula or cake knife to smooth the surface.
Upon completion, arrange small round biscuits with filling on top of the cream, leaving minimal gaps between them. Refrigerate the cake for 3 hours.
Icing for the cake
Melt the cooking chocolate in the microwave with 120 ml of warm boiled cream, stirring with a spoon until a smooth glaze is achieved.
Remove the cooled cake from the refrigerator and pour the icing over it. Smooth the glaze evenly, then refrigerate for an additional 30 minutes. Remove the mold's rim and baking paper before serving the cake.
