Fresh Low-Fat Pork Ribs: Choose high-quality pork ribs that are fresh and lean to ensure a healthier dish without sacrificing flavor. The tenderness of the meat will be enhanced through the cooking process, resulting in a melt-in-your-mouth experience.

Ingredients: simple, total time: 70 min., 4 serving
800 g pork ribs/ with low fat
water for ribs + 2 flat tsp of dry bio spice Vegeta
3 Tbsp Olive oil EVO
1 large onion/ finely chopped
800-900 g new potatoes/ cut in half or rings
250 ml Italian pesto sauce + 400 ml liquid + 100 ml
1 fresh yellow paprika / diced - optional
salt and black pepper to taste
1 full tsp allspice
1 tsp dry parsley
2 tsp dry basil
fresh parsley to taste
baking dish 32 x 20 cm
Preparation:
Preparation Ribs:
Begin by pre-cooking the ribs in water until they are halfway done, approximately 40 minutes, using moderate heat and covering the pot partially. Ensure there is enough water in a deep pot to cover the ribs, adding 2 teaspoons of Vegeta dry seasoning. The water level should be approximately two fingers higher than the ribs.
Retain the cooking liquid after this process. Once the cooking time is complete, strain the liquid and set it aside. This liquid will be used later when preparing the sauce with vegetables, and it can be added as needed at the end.
While the ribs are cooking, prepare the vegetables and sauce.
Preparation Vegetables and sauce:
Clean and finely chop the onion.
Sauté the onion in olive oil over low medium heat.
Once the onion is softened and translucent, add the chopped potatoes and 200 ml of rib broth (approximately 2 ladles). You may also add a chopped fresh pepper if desired.
Simmer briefly, stirring occasionally. After 10 minutes, incorporate the tomato sauce, allspice, basil, drz parsley, salt and pepper to taste stirring well. Add another 200 - 250 ml of rib broth (approximately 2 ladles).
Continue cooking for an additional 15 minutes, then remove from heat.
Roasting ribs and sauce in the oven
Preheat the oven to 200°C.
Transfer all the ingredients from the pan into an appropriate container, including 100 - 150 ml of the liquid used to cook the ribs.
Taste the mixture and season with dried parsley, basil, salt, and black pepper as desired. Mix thoroughly.
Cover the container with a lid or aluminum foil.
Bake at 180°C for approximately 25 minutes. Remove the aluminum foil and continue baking for an additional 20 minutes, until the contents are thoroughly softened.
Add a small amount of liquid during baking if necessary.
Allow the dish to cool for about 10-15 minutes before serving.
Garnish with fresh parsley sprigs before serving.

NOTE:
If Italian sauce is unavailable, you may substitute with four peeled and chopped large tomatoes (to peel easily, immerse them in hot water for 10 minutes) or use 2 spoons of tomato concentrate mixed with 350 ml of the liquid from the ribs, with adding little sugar.
Regular potatoes, sliced into rings or pieces, can be used in place of new potatoes.
For those who enjoy garlic, consider adding two minced cloves to the sauce.
During baking, if the sauce becomes overly thick, you may add a small amount of liquid as needed.
Store any remaining food covered in the refrigerator for up to 2-3 days.
Reheat using a pan, oven, or microwave, adding a little water if necessary.
