Roasted Ribs in their own Sauce with Potatoes and Paprika

## Effortless Rib and Potato Delight: A Perfect Pairing
This dish is simple to make and doesn't require constant attention in the kitchen. Just season the ribs and cook the potatoes for 15 minutes before baking. The combination is both excellent and delicious, with ribs that are soft inside and crispy outside, and potatoes that are tender. Follow my recipe for a perfect pairing.
Ingredients: simple, total time : 2h 30 min. 4 -6 serving
Potatoes:
6-7 medium potatoes/ diced
salt to taste
1 tsp dry spice Vegeta
water as needed
2 tsp ground paprika — allspice
Ribs:
2 kg whole bigger piece ribs
salt and black pepper to taste
150 ml oil/ for dish and spread ribs
1 tsp dry spice Vegeta to taste
400 ml broth/ or water as needed
1 tsp red ground paprika allspice
1 bay leaf/ or rosemary sprig
1 Tbsp fresh parsley/ finely chopped for sauce
Preparation:
Oil the ribs thoroughly, season with: salt, black pepper and allspice, rub all of this well into the ribs on all sides.
Place the prepared ribs in an oiled baking dish and add water or broth, and one bay leaf.
Cover the dish with aluminum foil and bake at 200°C, about 60 minutes.
After the specified time, turn the ribs over and add liquid if necessary.
Cover again with aluminum foil and bake for 30 minutes.
After the specified time, remove the aluminum foil and prick the meat a little, reduce heat to 180 °C, return to the oven and bake for another 45 minutes.
While roasting, pour water or broth over the ribs.
While the ribs are roasting, peel and wash the potatoes and cut them into smaller pieces, put them in a medium saucepan and cook for about 13 minutes.
Remove the potatoes with a slotted spoon and place them in a lightly oiled baking dish.
Do not throw away the water in which the potatoes were cooked
Mix 300 ml of hot liquid with 2 teaspoons allspice, salt and a little black pepper, mix it all, pour it over the potatoes and bake at 180 °C for about 30–35 minutes until soft.
When the potatoes are done, place them in a deep serving dish and cover with a plate.
Cut the finished ribs into pieces and cover in a deep plate for serving.
If you wish, you can filter the remaining sauce from the pot through a strainer or cheesecloth.
Serve a plate of potatoes and ribs, warm, with rib own sauce.
Serve this dish with a salad of your choice: roasted peppers with garlic, Shopska salad, or Greek salad.

NOTE:
If you like it spicy, sprinkle some chili powder over the ribs.
Instead of a bay leaf, you can sprinkle a rosemary sprig while the ribs are baking.
Keep the rest of the food in the fridge for up to 3 days.
Heat in an oven pan or microwave.
