Venetian Fritters

  • Venetian donuts, also known as fritters, are distinguished by their versatility, as they can be crafted with ingredients such as grated apples, raisins, or pine nuts. Traditionally prepared during Italy's carnival season, these treats are celebrated for their soft texture and delightful taste. The preparation process is straightforward and quick. Ingredients: simple, standing time: 60-90 min., total time: 115 minutes
  • 3 eggs/ room temperature

  • 300 ml lukewarm milk

  • 1/2 grated orange peel

  • 1/2 grated lemon peel

  • 500 g flour 00

  • 20 g fresh yeast

  • 80 g granulated sugar

  • 1 tsp brandy

  • 100 ml white wine/ room temperature

  • 80 g grated apples/ or 80 g raisins/ or 80 g ground pine nuts — optional

Preparation:
  1. Dissolve the yeast in lukewarm milk, adding a teaspoon of sugar and a teaspoon of flour, and allow it to activate for 10–15 minutes.

  2. Meanwhile, place the sifted flour and remaining sugar into a deep bowl, create a small well, and add a pinch of salt along with 3 eggs.

  3. Gradually incorporate the activated yeast, mixing by hand with a whisk.

  4. Once combined, add the brandy, white wine, and thoroughly washed grated lemon and orange peel.

  5. Whisk all the ingredients together again, then incorporate 80 g of grated, peeled apple.

  6. Ensure all ingredients are thoroughly mixed and cover the mixture with plastic wrap.

  7. Allow the dough to rest for 60–90 minutes.

  8. Thoroughly heat the oil in a deep and wide saucepan.

  9. After the resting period, use a spoon or small scoop to place portions of the dough into the hot oil.

  10. Fry until each piece is golden brown on all sides.

  11. Using a slotted spoon, transfer to a kitchen towel and roll in sugar.
