Ingredients: 23x33 cm baking dish, simple, total time: 50 min.

For the Biscuit:

  • 4 eggs

  • a pinch of salt

  • 180 g of granulated sugar

  • 1 bag vanilla sugar/ 10g

  • 1 grated lemon zest

  • 100 ml of seed oil/ or olive oil

  • 180 g of yogurt

  • 150 g of ground biscuit citrus fruits-orange

  • 150 g of flour 00

  • 1 bag baking powder


and more:

  • little butter + 1 Tbsp flour for spread baking dish

  • 450 g of apricots/ or other fruit of your choice)+

  • 2 Tbsp of granulated sugar

  • powdered sugar for sprinkling

Preparation:

Apricots:

  1. Thoroughly wash the apricots and remove the stems and pits. Trim any green areas at the top if present.

  2. Cut the apricots in half, then slice each half into four smaller pieces.

  3. Place the pieces in a deep dish, add two tablespoons of sugar, and mix well.

  4. Allow the mixture to sit while you prepare the sponge cake.


Sponge cake:

  1. Combine eggs, sugar, and vanilla sugar in a deep mixing bowl, and mix until the mixture becomes foamy.

  2. Incorporate grated lemon zest, crushed biscuits, oil, and kefir, and blend thoroughly using a mixer.

  3. Once the mixture is smooth, add the sifted flour and baking powder.

  4. Gently fold in the chopped apricots using a spatula, ensuring even distribution.

  5. Prepare a 23 x 33 cm pan, either round or square, by greasing it with butter and dusting with flour; remove any excess flour. Pour the batter into the pan and level the surface.

  6. Bake in a preheated oven for approximately 30-35 minutes.

  7. Use a toothpick to check the center of the cake; it should come out dry.

  8. The cake is now ready.

  9. Allow the cake to cool completely at room temperature.

  10. Dust with powdered sugar.

  11. Slice the cake into thin pieces and serve.

NOTE:

Tips and advice:

  • If using a 23 cm square baking dish or a 23 cm round mold, extend the baking time by approximately 10-15 minutes more. I exactly baked in 23 cm square mold about 50 minutes. Test the cake with a toothpick to ensure it is done. If the top of your oven tends to overheat, cover the cake with aluminum foil.

  • Semolina can be used as an alternative to ground biscuit.

  • If kefir is unavailable, yogurt can be substituted.

  • In place of oil, melt 120 g of butter.

  • Over time, if your cake hardens, you can soften with little orange juice or a small amount of milk.

  • You can decorate the cake with almond flakes if you want.

  • Store the cake at room temperature in an airtight container with a lid , or covered with nylon foil, for up to 5 days.
