Ingredients: simple, total time: 70 min. standing time: 2h
  • 350 g butter, softened room temperature

  • 100 g white sugar

  • 60 g maple syrup

  • 1 teaspoon vanilla extract

  • 420 g whole wheat pastry flour

  • 1/2 teaspoon salt

  • 130 g dried cranberries

  • 130 g pistachios, toasted

  • 130 g white chocolate chips/ optional- if you like

Cranberries Pistachio Cookies
Preparation:
  1. Cream the butter, sugar, maple syrup, and vanilla extract together using an electric mixer.

  2. Incorporate the flour one cup at a time, along with the salt, ensuring thorough mixing after each addition. Use a wooden spoon or spatula for this step, as using a handheld mixer may result in tough cookies.

  3. Fold in the cranberries and pistachios.

  4. Form the dough into two logs, each approximately 26 cm in length.

  5. Wrap the logs tightly with parchment paper or plastic wrap and refrigerate for at least 2 hours, or overnight if preferred.

  6. Preheat the oven to 180 °C for 15 minutes.

  7. Line the baking sheet(s) with parchment paper.

  8. Slice each log into pieces 7 mm to 1.5 cm thick and arrange on the baking sheet.

  9. Bake for approximately 18-20 minutes, or until the cookies are lightly browned.

  10. Allow the baking sheets to cool on a wire rack for 5 minutes.

  11. Subsequently, transfer the cookies from the pan and let them cool completely on the wire rack before storing them in an airtight container.

NOTE:
  • Fry the pistachios on the stove in a pot for about 5-7 minutes or in the oven, stirring once or twice in the middle so that it does not burn.

  • Keep the biscuits at room temperature in an airtight box with a lid.
