Oatmeal Cookies

  • Beautiful and healthy oatmeal cookies combined with maple syrup, chocolate, peanut butter. It is easy to prepare and ready quickly. Follow recipe.

Ingredients: simple, total time:
  • 140 g oat flakes 

  • 180 g natural peanut butter or almond butter/ without oil

  • 6 Tbsp pure maple syrup

  • 80 g chocolate chips

Preparation:
  1. Preheat oven to 180 °C. Line a large baking sheet with parchment paper or a silicone baking mat. Add quick oats to a food processor. Pulse oats until they become very fine and start to partially become flour consistency.

  2. Do it about 1 minute. When they are finer, it will be crispier cookies.

  3. Stir chopped oat flour with almond butter and maple syrup in a deep bowl, stir with a spatula. Stir well the ingredients until dough is compact for making cookies.

  4. At the end, add chocolate chips, mix and combine the ingredients well.

  5. Scoop out the mixture with a spoon.

  6. Roll into a little ball, place on baking paper and press with the palm of your hand to get a round biscuit about 5–6 mm thick.

  7. Form a cookie if it is irregularly shaped.

  8. Repeat with remaining dough.

  9. You can shape them as you want.

  10. I usually flatten the cookies first and then smooth around the edges to make the cookies round.

  11. Bake the cookies for about 10–15 minutes until they are lightly browned.

NOTE: Cookies baked this way can last up to 4–5 days, covered in a bowl. You can also pack them in a frieze, so they will serve you for later.
