Gnocchi Sauce

A wonderful sauce combined with peppers and tomatoes. You can combine it with any pasta, and you can also add minced meat filling. It is quick and easy to prepare. Follow recipe.
Ingredients: simple, total time: 25 min. 2 serving
2 Tbsp of olive oil EVO
1 medium onion/ finely chopped
2 clove of garlic/ minced
1 small carrot/ finely chopped
1 fresh red pepper / blended
200 ml tomato paste
100 ml water
1/2 tsp salt/ or to taste
1 tsp each basil, oregano
1 Tbsp Parmesan cheese
Preparation:
Ensure all ingredients are prepared as outlined above.
Sauté the onion in olive oil until it becomes translucent.
Incorporate the carrot and stir, allowing it to stew for approximately 5 minutes.
Subsequently, add the chopped pepper and continue to stew, stirring occasionally, for about 10-13 minutes.
Once the pepper has softened, transfer the mixture to a deep mixing bowl and blend until a creamy texture is achieved.
Return the blended mixture to the pan, then add tomato paste, salt, oregano, basil, and a touch of pepper.
Simmer for approximately 15–20 minutes, stirring occasionally and adding water as necessary.
Near the end of the simmering process, incorporate grated Parmesan cheese and mix thoroughly.
Add one package of gnocchi to this mixture and combine well.
Serve in deep plates, garnished with additional grated Parmesan.

NOTE:
This sauce can be enhanced with a touch of crushed red pepper, or it can be combined with tuna or minced meat.
For short-term storage, pack the sauce in sterile jars and refrigerate for up to 5 days.
For longer preservation, store the sauce in specialized containers with lids in the freezer for up to 2 months.
