Wonderful Italian Meatballs with Polenta in Tomato Sauce

  • One of the quintessential dishes that embodies the heart and soul of Italian cuisine is the delightful combination of wonderful Italian meatballs served alongside creamy polenta in a rich tomato sauce. This dish is a beloved staple in many Italian households, often prepared with great care and tradition at least once every two weeks. The reason for its popularity is no mystery: the taste is simply fantastic, and it has a unique ability to bring family and friends together around the dining table.

Ingredients for the Meatballs

To create these delectable meatballs, you will need a selection of high-quality ingredients that work harmoniously to produce a flavorful result. The primary components include:

- Ground Beef: The foundation of the meatballs, providing a rich and hearty flavor.

- Salt and Pepper: Essential seasonings that enhance the natural taste of the beef.

- Eggs: These act as a binding agent, ensuring that the meatballs hold their shape during cooking.

- Fresh Parsley: Chopped finely, it adds a burst of freshness and color.

- Breadcrumbs: They help to absorb moisture and contribute to the meatball's texture.

- Grated Pecorino Cheese: This sharp, salty cheese adds depth and complexity to the flavor profile.

Preparation Tips for the Meatballs

  • One of my favorite techniques is to prepare the meatballs a day in advance. In the evening, I mix all the ingredients and then shape them into balls. Afterward, I cover them with plastic wrap and refrigerate them overnight. This method allows the flavors to meld beautifully, as the various ingredients have time to absorb one another, resulting in an even more fantastic taste the next day. Additionally, by preparing the meatballs ahead of time, you save precious minutes during the busy cooking process, allowing you to focus on other elements of the meal.

Creating the Tomato Sauce

  • For the accompanying sauce, I recommend using an authentic Italian pesto sauce, which adds a unique twist to the traditional tomato base. I, personally enjoy using the Rustico "Mutti" brand for its rich flavor. The other ingredients you'll need for the sauce include:

- Olive Oil: A splash of good-quality oil enhances the overall richness of the sauce.

- Salt and Pepper: To taste, of course, as these are fundamental for seasoning.

- Garlic: Minced garlic infuses the sauce with a fragrant aroma and depth of flavor.

- Water: Added as needed to achieve the desired consistency.

- Dried Oregano and Basil: These herbs contribute classic Italian flavors that are essential in any tomato sauce.

- Fresh Parsley or Chives: For a fresh finishing touch.

- Crushed Chervil Leaves: I particularly enjoy adding these because they provide a fantastic smell and an extra layer of flavor that elevates the dish.

Preparing the Polenta

For the polenta, which serves as a comforting base for the meatballs, you will need:

- Corn Flour: The primary ingredient that will create the creamy texture.

- Water: Essential for cooking the corn flour to achieve the right consistency.

- Salt: A pinch to enhance the flavor of the polenta.

- Olive Oil: A drizzle at the end can add a nice sheen and richness to the finished dish.

Conclusion

  • Once everything is prepared, serve the meatballs generously coated in the savory tomato sauce over a bed of creamy polenta. • 1 large clove of garlic/minced

  • 20 ml Olive oil EVO

  • 1/2 tsp of salt

  • black pepper to taste

  • 1/2 tsp dry oregano

  • 1 tsp dry basil

For Polenta:

  • 1 liter of water

  • 230 g cornneal

  • 1 tsp salt

  • 1 Tbsp olive oil

Preparation:

Meatballs:

  1. Begin by preparing the meatballs: remove the crust from the bread and crumble it either manually or using a food processor.

  2. In a bowl, mix the minced veal with the finely crumbled breadcrumbs, grated pecorino cheese, chopped parsley, eggs, minced garlic, salt, black pepper, and nutmeg.

  3. Knead the mixture for about 10 minutes. Then, take small portions (approximately 20 g each) and shape them into meatballs by rolling them between your palms. Place the formed meatballs on a plate. For efficiency, roll them in crumbs and use a small meatball tool.

  4. If desired, coat the meatballs in flour or breadcrumbs and fry them until they are golden brown. Set aside.

Make Polenta:

  1. Pour one liter of water into the pot, add salt and oil, and heat it over low to moderate heat.

  2. When the water reaches a boil, reduce the heat and slowly introduce the kacamak in a thin stream, stirring constantly for about 10 minutes until the polenta thickens. (Ensure no lumps form.)

  3. After thickening, transfer the polenta into moistened deep plates and set aside.

Tomato sauce:

  1. Start by preparing the tomato sauce in the same pan. Add oil as necessary, and incorporate minced garlic, sautéing it over low to moderate heat until it becomes fragrant, approximately 10 seconds.

  2. Introduce the tomato purée along with a small amount of water, and cook over low heat for about 10 minutes.

  3. Once the mixture begins to simmer, add the meatballs and dried basil leaves. Stir gently with a wooden spoon and allow it to simmer for approximately 15–20 minutes over low heat, adding 150 ml of water. Cover and stir occasionally.

  4. As the sauce thickens, adjust the salt and black pepper to taste, add chopped fresh basil leaves, and then turn off the heat.

  5. If polenta is not preferred, serve the warm meatballs with pasta, mashed potatoes, or rice.

NOTE:

Tips and Advice:

Meatballs

  • Wear gloves while preparing the meatball mixture to prevent it from getting under your nails and soiling your hands.

  • The meatballs should be slightly smaller than ping-pong balls.

Polenta

  • Once the water reaches a boil for the polenta, ensure you reduce the heat entirely. Simultaneously, gradually add the corn flour while continuously stirring.

  • Continue cooking until the mixture thickens and bubbles appear on the surface.

  • Moisten the plates with water before serving the polenta to prevent sticking, facilitating cleaning after the meal.

Tomato sauce:

  • During the preparation of the sauce, gradually incorporate a small amount of water to enhance its flavor and consistency.

  • Once the tomato sauce has thickened and reduced by one-third, lower the heat, add the herbal seasoning, cook for an additional minute, and then turn off the heat.

  • Near the end of the cooking process, I included chopped celery leaves for an improved flavor. This can be substituted with parsley if preferred.

Storage:

  • Store any leftovers in the refrigerator for a period of three to four days, ensuring they are properly covered. Reheat using either a frying pan or a microwave.
