Ingredients: simple, total time: 45 min., 4 serving
  • 500 g potatoes/ boiled

  • 400 g carrots/ finely chopped

  • 80 g grated Parmesan cheese

  • 4-5 Tbsp breadcrumbs

  • 1 Tbsp fresh or dry parsley/ finely chopped

  • 1 egg

  • salt and pepper to taste

  • Olive oil EVO to taste for frying

Preparation:
  1. Peel the potatoes and cook them in pieces in cold water for about 23 minutes. Test them with a fork to make sure they are soft. After that, strain well and mash with a fork.

  2. Peel and coarsely grate the carrots (you can also super chop them to make finely chopped) and add to the potatoes.

  3. Add breadcrumbs, egg, Parmesan parsley, salt to taste, a little pepper.

  4. Mix all these ingredients well by hand, use nylon gloves.

  5. If the mixture is too compact, add a little milk, and if it is thin, add crumbs.

  6. Cover the mixture and transfer it to the refrigerator to stand for 30–60 minutes, you can also put it in the freezer for 15–20 minutes to firm up a bit.

  7. Oil or wet your hands and take the mixture with a spoon and make balls a little bigger than a walnut.

  8. Roll them into crumbs, make sure they are all the same size.

  9. If you decided to bake them in the oven: Arrange the moistened meatballs on baking paper, then flatten the meatballs slightly with a palm.

  10. Bake them in a preheated oven at 180 °C for about 20 minutes. Turn them halfway through the baking process, then place them on the grill and continue for another 5–10 minutes to make the crust crispier.

  11. If you decided to fry them in a pan: fry them in hot little oil 2–3 minutes, over moderate heat, until they are golden brown on both sides.

  12. Place them on kitchen paper to absorb excess fat.

  13. Serve warm with other dishes!

NOTE:
  • You may or may not roll the meatballs in crumbs, you can immediately shape them and bake them. I did not roll my carrot burgers in crumbs.

  • If you like spicy, you can add a little chili pepper chopped into small pieces without seeds or1/2 tsp hot red flakes.

  • You can make about 25 pieces from this mixture. If that amount is too much for one day, leave a covered container with foil in the fridge for the next day.
