Italian Rice Pudding Cake: A Delightful Dessert Experience
  • Italian Rice Pudding Cake is a delightful dessert that combines the comforting flavors of traditional rice pudding with the light, airy texture of a cake. This unique dessert is not only juicy and soft but also incredibly easy to eat, making it a perfect choice for any occasion, whether it be a family gathering, a festive celebration, or simply a sweet treat to enjoy at home.

Texture and Flavor Profile
  • The cake boasts a wonderfully moist and tender crumb, which is achieved by using a blend of creamy rice pudding and cake batter. The rice adds a delightful chewiness, while the pudding infuses the cake with rich, sweet flavors, often enhanced with hints of vanilla or citrus zest. When baked, the cake develops a slightly golden crust that contrasts beautifully with its soft interior, creating a pleasing texture that melts in your mouth.

Preparation and Waiting Time
  • While the recipe is straightforward and accessible, it does require a bit of patience, particularly when it comes to the dough. After preparing the batter, it is essential to allow it to chill in the refrigerator for at least three hours. This step is crucial as it helps to firm up the dough, making it easier to handle and ensuring that the final cake has the perfect consistency. However, this waiting period should not be seen as a drawback; instead, it presents a wonderful opportunity to get creative in the kitchen.

Making Accompaniments
  • During the time the cake dough is resting, you can utilize these hours to prepare delightful creams or toppings to accompany your Italian Rice Pudding Cake. A rich vanilla custard, a light whipped cream, or even a fruit compote can elevate the dessert to new heights. Consider making a luscious chocolate sauce or a tangy berry coulis to drizzle over each slice, adding a burst of flavor that complements the cake's sweetness.

Follow the Recipe
  • To create this wonderful cake, follow the recipe closely, paying attention to each step to ensure the best results. Begin by cooking the rice until tender, then mix it with milk, sugar, and eggs to form a creamy pudding base. Once this mixture has cooled, you can blend it with your cake ingredients, folding it gently to maintain the airiness of the batter. After chilling, bake the cake until it is set and lightly golden, then allow it to cool before serving.

Conclusion
  • In conclusion, Italian Rice Pudding Cake is a delightful dessert that is not only easy to make but also a joy to eat. With a little patience during the chilling process, you can create a stunning cake that is sure to impress your family and friends. Enjoy the process of making this delicious treat, and savor every bite of its soft, juicy goodness!

Preparation:

Dough Short crust pastry

  1. In a large bowl, whisk together the sugar, pure vanilla extract powder, egg, a pinch of salt, and the zest of half a lemon. Mix thoroughly with a hand whisk until the mixture becomes smooth and thick.

  2. Next, incorporate the butter, which should be at room temperature, and whisk until the mixture is foamy. Then, gently add the sifted type 00 flour and mix lightly using a spatula.

  3. Once the dough becomes firm, begin kneading it by hand until well combined.

  4. When the dough is smooth and compact, shape it into a ball, cover it with clear plastic wrap, and let it rest in the refrigerator for 2–3 hours.

  5. During this time, you can prepare a cream.

Cream:

  1. In a medium-sized pot, combine 200 ml of milk, a piece of lemon peel, and organic vanilla seeds. Stir the mixture gently.

  2. Allow the mixture to come to a boil over moderate heat.

  3. Meanwhile, whisk the egg yolks with sugar until frothy. Gradually add sifted type 00 flour, mixing thoroughly with a wire whisk.

  4. Transfer the well-mixed egg and flour mixture into a medium pot. Strain the boiled milk with vanilla and lemon peel into this pot and stir with a wire whisk over moderately low heat until it thickens into a smooth cream.

  5. Once the cream begins to bubble, let it cook for an additional 2 minutes, then remove from heat.

  6. Transfer the prepared cream into a bowl, cover it with plastic wrap, and allow it to cool.

  7. In the meantime, pour 500 ml of milk into a larger pot. Add the rice, butter, and 4 g of salt, and cook over low heat.

  8. Stir the ingredients well and cook for approximately 20–25 minutes, using a spatula.

  9. Once the rice has absorbed the milk and expanded, remove it from heat and let it cool, stirring constantly with a spatula.

  10. When both mixtures have sufficiently cooled, incorporate the yellow cream using a hand mixer. Gradually add the rice mixture by spoonfuls, stirring continuously.

  11. After thoroughly combining the mixture, add 3 eggs and stir again until the mixture is well-blended and homogeneous.

Processing:

  1. Subsequently, prepare a 26 cm round mold by coating it with butter and lining the bottom with parchment paper cut to size.

  2. Remove the dough from the refrigerator and roll it out to a thickness of 3-4 mm using a rolling pin.

  3. Once the dough reaches the desired thickness, transfer it to the mold using the rolling pin, and gently press it into the bottom and sides of the mold.

  4. Trim any excess dough using a knife or a pastry cutter.

  5. Ensure that the dough on the sides is 1.5-2 cm lower than the mold's rim.

  6. Next, pour the cream into the mold and smooth it with a spatula.

  7. After adding the cream and leveling the excess dough, trim the remaining dough so that the cream is flush with the dough.

  8. Bake the cake at 180°C for 40 minutes on the middle rack of the oven.

  9. Once baked, allow the cake to cool in the mold before dusting it with powdered sugar.
