##Delicious Lenten Pancakes: A Tradition Worth Savoring

  • Delight in these soft and aromatic lean pancakes, perfect for preparing after work. The original recipe requires flour, carbonated water, vanilla sugar, a pinch of salt, baking powder, and a Teflon pan. These pancakes are exceptionally soft and delightful. They pair well with various sweet toppings such as Nutella, jam, sugar, or nuts. The preparation is both quick and straightforward. Simply follow the recipe.

Ingredients: simple, total time: 30 min., 6 pancakes
  • 1 cup flour wheat/ or spelled or buckwheat - 250 ml cup

  • 1 cup of sparkling water/ 250 ml cup

  • a pinch of salt

  • 1/2 tsp of baking powder

  • 1 bag vanilla sugar/ 10g

  • 1 grated lemon zest

  • teflon pan 20 cm

Preparation:
  1. In a deep bowl, mix the flour, salt, baking powder, lemon, and vanilla sugar. 

  2. Gradually add the carbonated water, stirring constantly, until you get a smooth dough without lumps. You can also mix with a hand whisk.

  3. Let the dough rest for 10 minutes.

  4. Heat a pan, then pour in a little of the mixture with a ladle and spread it evenly. 

  5. Bake the pancakes at a medium temperature until golden brown on one side, then carefully turn them over and bake for another

    1--2 minute. (The dough folds inward, wait another 1 minute, then turn with a spatula.)

  6. Fill the pancakes as desired and serve while they are still warm.

NOTE:
  • In this recipe I used soft wheat flour 00, if you want you can add half buckwheat and half wheat flour.

  • Double the ingredients for a larger quantity except for the lemon.

  • Of this amount, there are 6 in total and I used a 20 cm Teflon pan.

  • Cover the remaining pancakes with plastic wrap and store at room temperature until tomorrow. You can keep the dough covered in the refrigerator until tomorrow.
