Soft and Quick Pancakes

  • Prepare a soft pancake batter in just 5 minutes, with pancakes ready to serve in 25 minutes. This recipe yields approximately 10 pancakes. For a larger batch, simply double the quantities of flour, sour water, and milk, and follow the recipe accordingly.

Ingredients: simple, total time: 30 min. 9-10 pancakes
  • 2 eggs

  • 350 ml milk

  • 120 ml mineral water

  • 220 g flour

  • pinch of salt

  • 1 tsp granulated sugar/ or

  • 1 bag vanilla sugar/ 10 g

  • 1 tsp grated lemon peel

  • little oil for frying

  • non-stick pan

Preparation:
  1. In a mixing bowl, beat the eggs with sugar and lemon peel. Add milk and sour water, and blend everything together using a mixer set to medium speed.

  2. Gradually incorporate the flour while continuing to beat the mixture.

  3. Once the mixture is thoroughly kneaded, allow it to rest for approximately 10 minutes at room temperature.

  4. During this period, prepare the utensils for flipping the pancakes and the pan in which they will be cooked.

  5. Add a small amount of oil to the pan and heat it over moderate heat.

  6. Ensure the oil quantity is slightly less than one tablespoon.

  7. Stir the pancake batter once more using a ladle.

  8. Pour the batter into the pan with a ladle, swirling it in a circular motion to evenly distribute it across the bottom, avoiding the edges to prevent tearing.

  9. Allow the pancake to cook for a minute or two, then flip it to the other side using a thin spatula or knife.

  10. Repeat this process with the remaining batter.

  11. The pancakes can be served with jam, nuts, Nutella, or sugar, accompanied by vanilla ice cream.

  12. Shape the pancakes into rolls or triangles as desired.

  13. Serve warm.
