Pancakes

Pancakes have a simple and quick way. This is how my mom always prepared them for dinner or breakfast. Follow recipe.
Ingredients: simple, total time: 35 min.
4 eggs
400 ml milk
400 ml sour water
pinch of salt
4 Tbsp Olive oil
1 grated lemon peel
1 bag vanilla sugar/ 10 g
400 g soft flour
Preparation:
Beat the eggs and incorporate less than half of the flour, mixing with a whisk. Then, add the vanilla sugar, lemon zest, oil, half of the milk, and half of the sour water, and combine thoroughly.
Finally, add the remaining ingredients and mix the batter until smooth and free of lumps.
The consistency of the batter should be neither too thick nor too thin.
Pour a small amount of oil into a non-stick pan and allow it to heat over moderate heat.
Using a ladle, transfer more than half of the batter into the pan, spreading it evenly in a circular motion.
Cook each side for approximately 2–3 minutes, turning with a thin spatula.
As the pancakes stack up, enlist assistance to spread them while they are still hot.
Consider using jam, nuts, sugar, or Nutella as spreads.

NOTE:
If the dough is too thick, incorporate a small amount of milk; if it is too thin, add additional flour.
Store the pancakes at room temperature, covered with plastic wrap, to maintain their softness.
