Ingredients: simple, cooking time: 20 min., Total time: 40 min
8 lambs steak with bones
6 cloves garlic/ finely chopped
1 lemon/ freshly squeezed juice
2 sprigs of rosemary/ finely chopped
salt and pepper to taste
Olive oil EVO to taste
1/2 sprig sage/ finely chopped
Preparation:
Rinse the lamb steaks and pat them dry with kitchen paper.
Place the garlic in a mortar and crush it into a paste with a pinch of sea salt.
Transfer the garlic paste to a bowl, then add lemon juice, a small amount of olive oil, salt, and freshly ground pepper, mixing thoroughly.
Using a kitchen brush, evenly coat each lamb steak with the mixture.
Place the coated lamb steaks in a freezer bag, add a sprig of rosemary and sage, and refrigerate for at least 30 minutes before cooking, or preferably overnight.
Heat a small amount of oil in a grill pan, add the lamb steaks, and cook them for approximately 5 minutes on each side.
If a grill pan is unavailable, remove as much garlic as possible to prevent bitterness during frying.
This dish pairs excellently with a perfectly baked potato au gratin and freshly grated cabbage salad.
