Delicious Požun Rolls: A Serbian Traditional Dessert for Christmas Eve
  • Požun rolls are a delightful and soft Serbian traditional dessert that has become a cherished part of our family's Christmas Eve celebrations. These irresistible treats are not only a feast for the taste buds but also a symbol of warmth and togetherness during the holiday season. The combination of sweet dough and the rich, nutty flavor of walnuts creates a harmonious blend that is hard to resist. My mum has always been the one to prepare these delectable rolls, and her expertise in the kitchen ensures that each batch is perfect. The process of making Požun rolls is filled with love and tradition, and it often brings our family together to share in the joy of baking. The aroma of freshly baked rolls wafting through the house is a sensory experience that signals the arrival of Christmas Eve.

Ingredients and Preparation
  • To prepare these scrumptious rolls, you will need a few key ingredients. The base of the dough typically consists of flour, sugar, yeast, milk, and eggs, which come together to create a soft and airy texture. The filling is made primarily of ground walnuts mixed with sugar and a hint of cinnamon, offering a warm and inviting flavor that complements the dough perfectly. The preparation begins with activating the yeast in warm milk, allowing it to froth and bubble, which is crucial for achieving the desired rise in the dough. Once the yeast is ready, it is combined with the other ingredients to form a smooth and pliable dough. After kneading, the dough is left to rise until it doubles in size, a process that can take about an hour.

Rolling and Baking
  • Once the dough has risen, it is rolled out into a large rectangle, and the walnut filling is spread evenly over the surface. The dough is then carefully rolled up into a log, which is sliced into smaller pieces that will become the individual rolls. Each roll is placed on a baking tray, where it will rise again before being baked to golden perfection. Baking the Požun rolls is a crucial step; the heat transforms the dough into a delightful treat with a beautifully soft interior and a slightly crisp exterior. The rolls are typically brushed with melted butter before baking, adding an extra layer of flavor and richness.

Family Traditions and Memories
  • Growing up, the preparation of Požun rolls was more than just a cooking activity; it was a family tradition that brought us together. My mum would often involve us in the process, teaching us the importance of patience and the joy of creating something delicious from scratch. As we worked together in the kitchen, we would share stories and laughter, making memories that would last a lifetime. On Christmas Eve, the Požun rolls take center stage on our dessert table, surrounded by other festive treats. As we gather around to enjoy the fruits of our labor, the first bite of these soft, walnut-filled rolls is always met with smiles and compliments. Each roll is a reminder of our heritage and the love that goes into every recipe passed down through generations.

Conclusion
  • In conclusion, Požun rolls are not just a dessert; they embody the spirit of Christmas in our family. With their deliciously soft texture and irresistible walnut filling, they are a true representation of Serbian culinary traditions. Following my mum's recipe not only allows us to enjoy these delightful rolls but also keeps alive the cherished memories of family bonding and festive celebrations. As we continue to make Požun rolls each Christmas Eve, we honor our heritage and create new memories with each batch we prepare.

Preparation:

DOUGH:

  1. Add sugar, egg yolk, 1 whole egg, butter, salt, and yeast that has risen with milk to the sifted flour

  2. Knead it all well on a board, but make sure that the dough is not too hard. If necessary, add more milk. Cover the mixed dough with a cloth, and let it stand for 10–15 minutes.

  3. During this time, make a filling for these rolls. Put 100 g sugar in a pot, add a little water, and cook the syrup. Remove the pot from the heat, pour this syrup over the ground walnuts, and add grated lemon peel, rum, and raisins if desired. Stir and leave to cool slightly.

PROCESSING:

  1. Roll out the dough with a rolling pin to a thickness of 4 mm. Cut into little squares, and put the little walnut filling.

  2. Wrap the dough in a roll, spread with egg yolk or egg white (my mum does this with egg white), and leave it to stand for 15 min. in the oven in a baking tray.

  3. After the specified time, bake at 180 °C for about 20 min; make sure that the rolls are only slightly browned around the edges.

  4. Place the rolls on a larger and deeper plate.

  5. Sprinkle with powdered sugar and serve warm or cold. Always leave these rolls covered. Generous and soft will be even better the next day!
