## Fresh and Flavorful Vegetable Spring Rolls
For dinner today, I opted to prepare spring rolls, as I had some leftover thin crusts from a previous gibanica recipe. This recipe is both quick and straightforward, and the rolls are as delectable as those found in Chinese restaurants. You will need a small red onion or half of one, along with carrots and cabbage sliced using the julienne method. In addition to its simplicity, this recipe is also cost-effective. These rolls are perfect for any time of the day, whether as a snack, breakfast, lunch, or dinner, and can be served as an appetizer. Follow the recipe..
Ingredients: simple, total time: 25 min., 5 rolls
5 thin crust/ cut in half
1/2 medium red onion/ finely chopped
1 carrot/ cut on jullliene and halved 120 g
130 g cabbage/ grated julliene
1/2 tsp bio dry spice Vegeta
black pepper to taste
120 ml water
200 ml oil for frying
soy sauce for for topping
Preparation:
Prepare all the vegetables as described above.
Fry the onion in a little oil for about 3-4 minutes until soft.
Add cabbage and carrot, and 120ml of water.
Season with pepper, salt and Vegeta dry seasoning. Mix everything well and cover.
Cook for about 7-8 minutes to low moderate heat, stirring occasionally, until the liquid has evaporated. The vegetables must not be completely limp.
Turn off the heat and wait for the filling to cool for about 10 - 15 minutes.
Prepare the crusts, put them on work the surface and cut them into two equal parts.
Coat the first crust with oil, take a spoonful of the filling and spread it in the middle.
Fold the sides inward on both sides and roll into a roll.
Put the roll back at the beginning of the second crust, spread the second crust with oil, and twist into a roll using the same method.
So you roll the rolls in two crusts. And every crust coat with oil!
Place the rolls on a flat plate and coat each one with oil over the tops.
Heat the oil on low to moderate heat, do not increase the heat to prevent the rolls from burning. When the oil is heated, add 3 pieces each and bake each side for about 4-5 minutes.
Serve the finished and warm rolls with soy sauce.
Buon appetito!
NOTE :
Keep the rest of the rolls covered at room temperature for 1-2 days
