Zucchini and Brussels sprouts salad
Ingredients: simple, total time: 25 min, 2 servings
  • Olive oil EVO to taste

  • 2 zucchini/ cut into rings

  • 8 Brussel sprouts/ quartered

  • 2 cloves of garlic/ minced

  • salt and pepper to taste

  • 150 ml broth/ or water

Preparation:
  1. Sauté the chopped garlic in a pan with a small amount of olive oil for approximately 20 seconds.

  2. Incorporate the chopped zucchini and quartered Brussels sprouts. Sauté for a few minutes, then add the broth, ensuring the ingredients are well combined. Allow to simmer until the vegetables are tender and the liquid has evaporated.

  3. Plate the dish and garnish with grated Parmesan or Pecorino cheese.
