### Refreshing Summer Salad: Quick and Versatile Recipe
A wonderful and light salad for summer and hot days. The preparation is very simple and fast. You can combine it with any meal. Follow the recipe.
Ingredients: simple, total time: 10 min, 2 serving
10 cherry tomatoes/ cut into half or diced
1 cucumber with peel / diced
1 red onion/ cut into ribs
4 lettuce leaves
6 whole black olives
8 whole green olives
50 g Greek feta cheese/ grated
Olive oil EVO to taste
any vinegar to taste
salt and black pepper to taste
Preparation:
Wash all the vegetables and cut them as described in the recipe.
Place 2 leaves of washed lettuce in smaller salad bowls.
Put all the other vegetables with green olives in a deep salad bowl.
Add salt, pepper, olive oil and vinegar to taste, then mix all well.
Using a spoon, pour the mixture over the lettuce in a small bowl, then sprinkle with grated Greek feta cheese.
Garnish with black olives.
Place to cool in the refrigerator for about 30 minutes before serving.
Serve!

NOTE:
If you don't really like the cucumber peel, or it's too hard for you, you can remove it.
Instead of cherry tomatoes, you can use regular tomatoes or San Marzano.
Instead of Greek feta cheese, you can use grated Trappist or Gouda cheese.
Instead of green salad, you can add Chinese cabbage, fennel or matavilz salad as well as arugula.
Keep the rest of the salad in the refrigerator for 1 day.
