  • Imagine the scene: a cozy Sunday afternoon, sunlight streaming through the windows, and the enticing aroma of a delicious dish wafting through the entire apartment. The Star Ingredients
  • At the heart of this dish are large chicken legs, consisting of the drumstick and thigh attached, which provide a juicy and tender texture. For those who prefer smaller portions, you can opt for four small whole chicken legs. Alternatively, if you have a larger family or simply want to ensure there are plenty of leftovers, three large chicken legs will suffice. The chicken is complemented by a vibrant vegetable sauce that enhances its flavor profile, making each bite a burst of deliciousness.


The Flavorful Sauce
  • The sauce is a harmonious blend of fresh, colorful bell peppers, sweet onions, and ripe tomatoes, which not only add depth to the dish but also contribute to its visual appeal. These vegetables are sautéed to perfection, allowing their natural sweetness to emerge. The addition of Italian tomato passata brings a rich, tangy element that ties the entire dish together.

After the chicken has developed a golden crust, pour in the Italian tomato passata, stirring to combine all the ingredients.

  • 4 pieces chicken drumsticks with thighs/ without skin - 1.35kg

  • 1 onion/ finely chopped

  • 1 fresh green pepper/ diced

  • 1 fresh red pepper/ diced

  • 1 fresh yellow pepper

  • 3 medium San Marzano tomatoes/ chopped

  • 270 ml Italian Rustico tomato passata sauce

  • Olive oil to taste

  • salt and pepper to taste

  • 1 full tsp red ground pepper/ optional as desired

  • oregano to taste

  • basil to taste

  • 450 ml broth/ or water


For serving:

  • mashed potatoes

  • rice

  • polenta

  • boiled potatoes

Preparation:

Preparation and season Chicken meat:

  1. Remove the skin and fat from the chicken, then wash and dry it thoroughly. Season with salt and black pepper according to your preference.

  2. While it might seem that removing the skin eliminates the most flavorful part of the chicken, it's important to note that this part, particularly in older chickens, can accumulate unhealthy yellow fats that contribute to bad cholesterol. Rest assured, the dish remains delicious without it. In my preparation, I discarded 350 g of fat from a total of 1.7 kg. I used whole drumsticks along with chicken thighs.


Frying Chicken meat:

  1. Sauté in minimal oil over low to moderate heat until achieving a golden brown color.

  2. Arrange the chicken pieces on a plate.


Making Sauce:

  1. In the same pan, add the onion and sauté in the existing fat, stirring until it becomes softened.

  2. Incorporate the chopped peppers, seasoning with salt and pepper to taste. Stir and cover the pan, cooking over low to moderate heat for approximately 5-7 minutes.

  3. Add the chopped tomatoes, mix thoroughly, cover, and cook on low heat for about 15 minutes, stirring occasionally.

  4. After the designated time, introduce the Italian passata sauce, oregano, and basil. Return the chicken pieces to the pan and add 150 ml of broth or water, stirring occasionally.

  5. Cover the pan and cook over low heat for approximately 35-40 minutes, adding the remaining broth (or water) two more times during the cooking process. Rotate the chicken drumsticks as they cook.

  6. Once the sauce has thickened and achieved a rich color, the dish is ready to serve.


Serving:

  1. Allow the fuel dish to cool for approximately 10 minutes.

  2. Accompany with rice, mashed potatoes, boiled potatoes, or polenta.

NOTE:

Tips and Advice:

  • During the cooking process, you may incorporate boiled small new potatoes or potatoes that have been pre-cooked for approximately 15 minutes.

  • I opted for a lighter version with rice. I utilized 300g of rice, thoroughly rinsed several times, then added 900 ml of water, a pinch of salt, pepper to taste, and 1 teaspoon of Vegeta dry spice. I cooked it on low to moderate heat for about 30 minutes with the lid partially on, until the rice was nicely swollen and a small amount of liquid remained on the surface. I ensured to add it simultaneously with the chicken pieces in the sauce. If you combine rice with this dish, you will get something similar to djuvec, only without baking in the oven.

  • Among vegetables, you may include carrots, celery stalks, cubed zucchini, and eggplant. I frequently prepare this dish and can attest that all these variations are excellent.

  • If Italian passata sauce is unavailable, I used Rustico, you can substitute with canned pulp or tomato concentrate. For the latter, you will need about 2-3 tablespoons mixed with 300 ml of water. If using tomato concentrate, add one teaspoon of sugar.


Storage:

  • Store the remainder of the dish covered in the refrigerator for up to four days. Reheat using a pan or microwave.
