Preparation:
  1. Place the sweet cream in a pot and add the roasted chestnuts. Cook over moderate heat.

  2. Once it begins to boil, remove from heat.

  3. Transfer the cooked sweet cream, milk, and chestnuts to a blender. Blend thoroughly until a smooth mixture forms. If needed, add more milk and blend again with the rum.

  4. The mixture should be thick and spreadable.

  5. Melt the chocolate and butter over low to moderate heat.

  6. Meanwhile, separate the 4 egg yolks into two separate bowls.

  7. Add sugar to the yolks and mix until the mixture becomes light and fluffy.

  8. Gradually incorporate the chestnut mixture in three parts, mixing well after each addition.

  9. Next, add the melted chocolate and mix again using a mixer.

  10. Whisk the egg whites with a mixer until a firm, thick consistency is achieved.

  11. Once the egg whites reach the desired stiffness, gently fold them into the chocolate mixture using a spatula, moving from top to bottom.

  12. Once combined, pour the mixture into a thoroughly greased mold and bake in a preheated oven at 180 °C for 30-35 minutes.

  13. Turn off the oven and let the cake rest inside for about 10 minutes before removing it.

  14. Run a knife around the edges of the cake to loosen it, then remove the mold ring.

  15. Refrigerate the cake for 6 hours or overnight to cool completely.

  16. Serve.
