Chestnut-Walnut Shortcrust Pastry Cake

A Wonderful Shortcrust Pastry Cake with Apple, Chestnut, and Walnut Filling
  • This delightful shortcrust pastry cake, filled with a luscious blend of apple, chestnut, and walnut, is a true testament to the art of baking. The preparation process is not only quick but also simple, making it an ideal choice for any occasion, whether it's a festive celebration, a family gathering, or simply a cozy afternoon tea.

Preparation Steps and Techniques
  • To begin, you will create a rich and buttery short dough. This dough serves as the foundation for your cake, providing a tender and flaky texture that beautifully complements the hearty filling. Start by combining flour, eggs, butter, and a touch of baking powder in a mixing bowl. For an added layer of flavor, consider incorporating optional ingredients such as fresh lemon zest and vanilla sugar, which will enhance the overall taste of the pastry. Once your ingredients are well mixed, shape the dough into a smooth ball. This is a crucial step, as it allows the gluten in the flour to relax, ensuring that your pastry will be light and crumbly once baked. After forming the ball, wrap it tightly in foil and place it in the refrigerator to rest for about 40 minutes. This chilling period firms up the dough and allows the flavors to meld, resulting in a more cohesive taste.

Preparing the Filling
  • While the dough is resting, it’s the perfect time to prepare the delicious filling that will elevate your cake to new heights. Start by peeling and slicing fresh apples, which will provide a sweet and slightly tart flavor profile. Combine the apples with chestnut puree, which adds a creamy richness, and finely chopped walnuts for a delightful crunch. To enhance the filling, incorporate crushed biscuits, which will add texture and help bind the mixture together. A spoonful of plum jam can be stirred in for a hint of sweetness and moisture, while a sprinkle of vanilla sugar will infuse the filling with warmth and depth. Finally, don’t forget to squeeze in the juice of one lemon, which will brighten the flavors and balance the sweetness of the other ingredients.

Assembling the Cake
  • Once your dough has rested and your filling is prepared, it’s time to bring everything together. Preheat your oven to the appropriate temperature, ensuring that it’s perfectly heated for baking. Roll out the chilled short dough on a floured surface until it reaches your desired thickness. Carefully transfer the rolled-out dough into a cake pan, pressing it gently into the corners and edges. Next, spoon the apple, chestnut, and walnut filling into the pastry shell, spreading it evenly to ensure every slice is packed with flavor. If desired, you can use any leftover dough to create decorative lattice work or simple shapes to place on top of the filling, adding a charming touch to your cake.

Baking and Enjoying the Cake
  • Once assembled, place the cake in the preheated oven and allow it to bake until the pastry is golden brown and the filling is bubbling with deliciousness. The aroma that fills your kitchen during this time is simply irresistible and will surely have everyone eagerly awaiting the moment they can indulge in a slice. After baking, let the cake cool slightly before slicing into it. Each bite promises a delightful combination of textures and flavors, from the buttery shortcrust to the sweet and nutty filling. In conclusion, this beautifully made shortcrust pastry cake with apple, chestnut, and walnut filling is not just a dessert; it’s an experience to be savored. I believe you will enjoy every bite of this exquisite creation, making it a cherished addition to your recipe collection for years to come.
