Tips for Making Real, Juicy Pub White Hangers at Home
  • If you're looking to recreate the delicious experience of enjoying a traditional Balkan dish right in your own kitchen, then you’re in for a treat. I will give you some tips on how to make real, juicy pub white hangers in the home version. The Vešalica, often referred to as the Pork Hanger, is a beloved grilled dish that showcases the rich flavors and culinary heritage of the Balkans. This dish is typically made from high-quality pork cuts, most commonly the loin or neck, which provide a tender and flavorful base for your grilling endeavors.

Choosing the Right Cut of Meat
  • To start, it’s crucial to select the right cut of pork for your white hangers. While pork loin is a popular choice due to its lean nature and tenderness, the neck cut offers a richer flavor and a bit more fat, which can enhance the juiciness of the final product. When purchasing your meat, look for cuts that have a good amount of marbling, as the fat will render during cooking, keeping the meat moist and flavorful. Additionally, consider asking your butcher for advice on the freshest cuts available, as quality can significantly impact the outcome of your dish.

Preparing the Marinade
  • The marinade is an essential component of achieving the perfect flavor profile for your white hangers. A classic marinade for Vešalica typically includes ingredients such as garlic, olive oil, lemon juice, and a blend of spices. To create a simple yet effective marinade, combine minced garlic with olive oil, fresh lemon juice, salt, and pepper in a bowl. You can also add herbs like oregano or thyme to elevate the flavor. Allow the pork to marinate for at least a couple of hours, or ideally overnight, to ensure that the flavors penetrate the meat thoroughly. The Stuffed Version

  • For those who prefer a richer version of the dish, consider preparing a stuffed white hanger. This variation often includes a delightful filling of cheese and bacon, which adds an extra layer of flavor and texture. For the stuffing, you can use a variety of cheeses such as feta, mozzarella, or even a sharp cheddar, depending on your taste preferences. Dice some bacon and cook it until crispy, then mix it with the cheese of your choice. Carefully slice the pork to create a pocket and fill it generously with the cheese and bacon mixture before securing it with kitchen twine or toothpicks.

Grilling to Perfection
  • When it comes to grilling your Vešalica, achieving the right temperature is key. Preheat your grill to medium-high heat, ensuring that it is hot enough to sear the meat and create a beautiful crust while keeping the inside juicy. Place the marinated pork on the grill, and cook each side for about 4-6 minutes, depending on the thickness of the meat. Use a meat thermometer to check for doneness; the internal temperature should reach at least 145°F (63°C) for safe consumption. Allow the pork to rest for a few minutes after grilling to let the juices redistribute before slicing.

Serving Suggestions
  • Once your white hangers are grilled to perfection, it’s time to serve them. Traditionally, they can be accompanied by sides such as grilled vegetables, a fresh salad, or even traditional Balkan bread. A drizzle of tzatziki sauce or a sprinkle of fresh herbs can add a refreshing touch that complements the rich flavors of the pork.

Conclusion
  • In conclusion, making authentic, juicy pub white hangers at home is a rewarding culinary adventure that allows you to explore the rich flavors of Balkan cuisine. By selecting the right cut of meat, preparing a flavorful marinade, considering a stuffed version, and grilling to perfection, you can create a dish that captures the essence of traditional Balkan grilling. Enjoy the process, and savor each bite of your homemade Vešalica!

Preparation:
  1. Cut the meat (of flintlock) into rectangles about 12 cm long and about 2 cm thick

  2. Beat the hangers well with a meat mallet on both sides (up to a thickness of 1 cm).

  3. Leave the hangers to marinate in sunflower oil for a couple of hours

  4. Grill the hangers on a well-heated grill. Salt them towards the end of baking, not before (that way the juices stay in the hanger). Apart from salt, you don't need any other spices.

  5. Be careful not to overcook the meat - then the hangers will be dry. On a well-heated grill, 2-3 minutes on each side is enough.

Enjoy in bites!

NOTE:
  • Keep the rest of the pork chops in the refrigerator for up to 2 days. Just a little advice, this meat can be harder for 1 day, so add some water to the pan to soften it.
