  • 4 Tbsp Olive oil EVO

  • 1 pork fillet/ 800 g cut into cubes 3 cm

  • 3 Tbsp butter

  • 1 small onion / finely chopped

  • 400 g of champignons/ cut into leaves

  • 400 ml of cooking cream

  • 1 tsp of crushed paprika/ optional

  • 3 cloves of garlic/ minced

  • 1 tsp of mustard

  • salt and black pepper to taste

Preparation:
  1. Trim the pork fillet of any veins and cut it into pieces approximately 3 cm in size.

  2. Season each piece with salt and pepper on both sides.

  3. Heat a pan with a small amount of oil over medium heat and add the steaks.

  4. Sauté for 2-3 minutes, then turn them over and drizzle butter over the meat using a spoon. Occasionally shake the pan to ensure even browning.

  5. Once the steaks achieve a golden color, remove them from the pan, place them in a container, and cover with foil to allow the steaks to absorb more of their juices.

  6. In the remaining fat, add the finely chopped onion and sauté for about 2 minutes.

  7. Add the crushed pepper, stir for a minute, then incorporate the sliced mushrooms, along with salt and pepper. Allow the liquid to evaporate while stirring.

  8. Add the finely chopped garlic, followed by the cooking cream and 1 teaspoon of mustard, then reduce the heat to low.
