The Dough:

  • 4 egg whites

  • a pinch of salt

  • 150 g of granulated sugar

  • 150 g of butter/ or margarine

  • 100 g of flour

  • 150 g ground walnuts

  • pinch of a baking powder


Spread:

  • 4 egg yolks

  • 150 g of granulated sugar

  • 1 bag vanilla sugar


Cream:

  • 100 ml of milk

  • 150 g of sugar

  • 100 g of chocolate

  • 150 g of walnuts

  • 1 bag vanilla sugar/ 10g

  • 1 Tbsp rum

  • 100 g of butter/ or margarine


and

  • 50 g ground walnuts for sprinkling

Preparation:

Dough:

  1. Beat the egg whites with a pinch of salt until stiff.

  2. Cream the margarine with the sugar, then incorporate the flour and baking powder, followed by the walnuts and egg whites.

  3. Pour the mixture into a 35 x 25 cm mold lined with parchment paper.

  4. Bake in a preheated oven at 180 °C for 30 minutes.


Spread:

  1. Beat the egg yolks with the sugar and vanilla sugar until the mixture is smooth and glossy.

  2. After baking for 30 minutes, remove the biscuit from the oven, spread the egg yolk cream over it, and return it to the oven. Reduce the temperature to 150 °C and bake for an additional 20 minutes.


Cream:

  1. For the cream, bring the milk to a boil with sugar and vanilla sugar.

  2. Add the walnuts, grated chocolate, and rum to the hot mixture.

  3. Mix thoroughly and add sliced margarine, stirring until fully dissolved.

  4. Once the cake is baked, spread the chocolate cream over the yellow layer and sprinkle with ground walnuts.

  5. Use a cup or round mold to cut the cake into crescent shapes.
