Požun Rolls

  • Delicious, soft, Požun rolls, and irresistible with walnuts Serbian traditional dessert which are preparing for Christmas Eve. My mum always doing this! Follow recipe.

Ingredients: medium, total time: 60 min. 60 pieces

DOUGH:

  • 500 g flour

  • 200 g /butter or margarine

  • 60 g crystal sugar

  • 3 egg yolks

  • 1 whole egg

  • A pinch of salt

  • 1 teaspoon of sugar

  • 120 ml of milk

  • 20 g yeast put in little pot and let raise yeast for 15 min.

FILLING:

  • 250 g of ground walnuts

  • 100 g of sugar

  • 1 bag vanilla sugar/ 19 g

  • 75 ml of water

  • 1 lemon zest

  • a little rum/ optional

  • raisins as desired







Preparation:

DOUGH:

  1. Add sugar, egg yolk, 1 whole egg, butter, salt, and yeast that risen with milk to the sifted flour

  2. Knead it all well on a board, but make sure that the dough is not too hard. If necessary, add more milk. Cover the mixed dough with a cloth, let it stand for 10–15 minutes.

  3. During this time, make a filling for these rolls. Put 100 g sugar in a pot, add a little water and cook the syrup. Remove the pot from the heat, pour this syrup over the ground walnuts, add grated lemon peel, rum, and raisins if desired. Stir and leave to cool slightly.

PROCESSING:

  1. Roll out the dough with a rolling pin to a thickness of 4 mm. Cut into little squares, put the little walnut filling.

  2. Wrap the dough in a roll, spread with egg yolk or egg white (my mum do this with egg white), leave it to stand 15 min., in the oven in a baking tray.

  3. After the specified time, bake at 180 °C about 20 min., make sure that the rolls are only slightly browned around the edges.

  4. Place the rolls on a larger and deeper plate.

  5. Sprinkle with powdered sugar and serve warm or cold. Always leave these rolls covered. Generous and softer will be even better the next day!
