10 g butter
grated peel of 1 orange/ or lemon as you like
100 ml of orange/ or lemon juice
grated rind of 1 lemon
1 Tablespoon wild fennel brandy
pinch of salt
2 Tablespoons mandarin liqueurs
crystal sugar for rolling fluffy pancakes
Preparation:
In a large bowl, combine sifted flour, 2 eggs, and 35 g of sugar. Mix the ingredients using a mixer on the lowest speed setting.
After mixing for a few minutes, incorporate 60 ml of milk and the grated zest of an orange and a lemon, continuing to mix with the mixer.
Once the dough becomes cohesive, add butter that has been softened at room temperature for 1 hour.
